Prepare the vegetables
Peel the onion and remove the roots, wash it thoroughly with water and cut it into 4 pieces.
Peel 1 purple onion, wash it clean and slice it thinly. After slicing, to eliminate the strong smell of the purple onion, place it in a small bowl, add 1 tablespoon of vinegar, 1 tablespoon of sugar, and 100ml of cold water, and soak for about 15 minutes. When the purple onion becomes soft and translucent, remove it to drain.
Slice the remaining purple onion thinly to use for frying. Peel the garlic, wash it clean, crush it with a knife, and mince it finely.
Wash the mint leaves and chop them finely. Wash the chili and slice it diagonally.
Peel the green banana, soak it in water with 4 tablespoons of vinegar. Use a peeler to slice the banana into thin pieces.
Next, use a specialized peeler to shred the carrot, mango, and the outer skin of the cucumber into small, thin, and even strips, and soak them in the bowl of water that we used to soak the banana. Soak them for about 5 minutes and then remove to drain.

Prepare beef tripe
Wash the beef tripe thoroughly. Then, place a pot on the stove, add about 2 liters of water, put the beef tripe in, add 1 onion, season with 2 teaspoons of salt, 3 tablespoons of vinegar, and boil for 30 minutes.
After 30 minutes, turn off the heat, and immediately transfer the beef tripe to a bowl of cold water.
Once the beef tripe has cooled, use a sharp knife to cut it into thin diagonal slices.
Reuse the pan and the oil that was used to sauté the onion, add the beef tripe and mix well so that the onion oil absorbs into the beef tripe.

Mix the fish sauce
To prepare the dipping sauce, add 1 tablespoon of sugar, 1 tablespoon of fish sauce, and 1 tablespoon of lime juice into a bowl. Stir well to ensure all the ingredients are completely dissolved together.
