  • To ensure the full flavor and nutrition of the frog, you should buy live frogs instead of processed or frozen frogs.
  • Additionally, choose frogs that are large in size, with outer skin that is yellow-brown, and when touching the frog’s body, you can feel the firm meat.
  • Avoid selecting frogs that are dead, have soft flesh, and especially frogs that have an unusual purple bruised color after processing, as eating them may not be good for health.

  • The right green bananas will have a dark green color, fairly uniform size, and look plump and shiny; especially, those with many spots turning yellow will taste better.
  • Avoid choosing bruised bananas, those with a light green color, and smaller sizes as these are still unripe and do not contain many nutrients.

  • Prepare other ingredients

    Green bananas should be cut at the ends, peeled, and cut into bite-sized pieces. To prevent the green bananas from turning brown and to reduce bitterness, soak them in a mixture of water with a little salt and 1 tablespoon of lemon juice.

    Next, blanch the green bananas in boiling water for about 2 minutes, then remove and soak in cold water for about 10 minutes, rinse with clean water, and let them drain.

    Pennywort leaves should be soaked in diluted salt water for about 5 minutes, then drained. After that, use a knife to cut them into small strips.

  • Fry the frog

    Place the frog in the air fryer lined with foil and fry at 200 degrees Celsius for 10 minutes.

    Then, turn the frog over and fry at 200 degrees Celsius for another 5 minutes until both sides are golden brown.

    Tip: If you don’t have an air fryer, you can use a frying pan. To prevent the frog from burning, keep the heat low and turn the frog frequently!

  • Stir-fry frog with green banana

    Place a pan on the stove, turn the heat to medium, add 2 tablespoons of cooking oil and heat it up, when the oil is hot, add the remaining chopped shallots to sauté until fragrant.

    After the shallots are golden and fragrant, add the prepared green bananas into the pan and stir well.

    Add 2 tablespoons of water, 1 tablespoon of fish sauce, and stir-fry for about 3 minutes so that the bananas absorb the seasoning evenly.

    When the green bananas are cooked, add the fried frog from earlier into the pan, stir-fry for about 3 – 5 minutes until the frog meat absorbs the seasoning and the stir-fry sauce thickens.

    Then, sprinkle the pepper leaves and 1 teaspoon of ground pepper on top and adjust the seasoning to taste before turning off the heat.
