Sea bass 1 sun 500 gr Crushed garlic 5 cloves Bird’s eye chili 10 pieces Shrimp salt 2 teaspoons Cooking oil 3 tablespoons Common spices a little (seasoning/ MSG/ salt/ ground pepper)

How to Choose Good Sea Bass

  • Good dried sea bass has a shiny golden striped body, a light-colored back, and a pinkish-white belly.
  • Choose those that are intact and have a dry surface.
  • Avoid fish with a slimy surface and an unpleasant smell when sniffed.
  • It is advisable to buy from reputable stores and check the expiration date of the fish!

How to prepare Sun-dried Mackerel fried with salt and chili

  • Prepare the mackerel

    Wash the mackerel thoroughly and let it drain.

    In a mortar, add 3 teaspoons of salt, 1.5 teaspoons of monosodium glutamate, 2 teaspoons of seasoning powder, and 2 teaspoons of shrimp salt along with 10 bird’s eye chilies, then pound the mixture until well blended.

    Next, wear plastic gloves and rub the salt and chili mixture onto both sides of the fish, marinating it for about 5 minutes to allow the flavors to infuse.

    Tip: If you can’t handle too much spiciness, feel free to reduce the amount of chili!

  • Fry the fish

    Heat a pan on the stove, add 3 tablespoons of cooking oil, and when the oil is hot, add 5 crushed garlic cloves and sauté them until fragrant over medium heat.

    Next, add the marinated mackerel to the pan and fry for about 5 – 7 minutes until golden brown, then flip to the other side and continue frying.

    When both sides of the fish are golden brown, remove it to a plate and you’re done!

    Tip: To make the fish crispier and tastier, be sure to have enough oil covering the surface of the fish.
