How to Choose Fresh and Delicious Golden Threadfin Bream
- Choose golden threadfin bream with a gray-blue back and a silver-white belly. The upper part of the gill cover has black spots, the tail fin is yellow, the head is slightly pointed, the mouth is slanted, and the lower jaw protrudes.
- The fish’s eyes should be clear and not cloudy or discolored. Pressing the fish with your hand should show good elasticity.
- The fish should have a natural fishy smell and no strange odors. Avoid buying fish with unusual smells as they may be spoiled or chemically preserved.

Prepare the ingredients
Clean the silver catfish, then drain. Cut the fish open and remove the head, backbone, and innards. After that, rinse the fish several times with clean water to reduce the fishy smell.
Wash the fresh chili, drain, and chop it finely. Put all the chopped chili into a mortar and grind until the chili is pureed evenly.
Tip: To save time, you can use chili powder instead of fresh chili in an equivalent amount. -
Marinate the fish
Mix the prepared fish thoroughly with a mixture of 100g of ground chili, 1 tablespoon of salt, 1 teaspoon of white sugar, 1 teaspoon of seasoning powder, and 1 teaspoon of pepper until the fish absorbs the spices.
Tip:
- You can adjust the spices to suit your family’s taste. However, do not use too much sugar for marinating as it can cause the dried fish to burn and affect the flavor when grilling or frying.
- After marinating, you should keep the fish in the fridge for 4 – 8 hours. A longer marinating time will help the fish absorb the spices better and help the dried fish preserve well.

Drying the fish
After soaking in the seasoning, place the fish onto a basket or mesh (or mat) to sun-dry for about 1 day.
Tip:
- You should choose sunny weather to dry the fish, which will help the fish dry evenly and faster.
- If you cannot sun-dry, you can dehydrate the fish for 8 – 9 hours at a temperature below 100 degrees Celsius to dry it.
- You can also dry the fish for longer, about 2 – 4 sunny days, as longer drying helps preserve the fish better.
