How to choose fresh pork
- To select fresh pork, first observe the color of the meat. Good pork should have a light pink color, bright meat, and a characteristic smell.
- The surface of the pork should be dry and clean; when you press lightly on the piece of meat, it should have a slight bounce and be a little sticky to the touch.
- You should not buy pork that looks pale, has a foul smell, or has a slimy surface. This indicates that the pork has been stored for too long, and eating it will not be fresh and could be unhealthy.
How to choose delicious chewy vermicelli
- For stir-fried or mixed dishes, dong vermicelli is a suitable choice because the vermicelli strands are chewy and crunchy after being blanched, unlike rice vermicelli which tends to be mushy.
- You should buy vermicelli at reputable supermarkets or the TasteVN store system nationwide to ensure product quality. When purchasing, be sure to check the expiration date and whether the packaging is sealed properly!
- Delicious chewy dong vermicelli should have long, straight strands that are less likely to break or shatter. The vermicelli should have a translucent gray-white color and be thick.
- Avoid choosing dong vermicelli with broken, crumbled strands or poorly sealed packaging, as this usually indicates that the vermicelli will be mushy and not chewy anymore.



Marinate the meat
With 200g of pork and 2 ears of wood ear mushrooms, we will marinate with 2 spoons of oyster sauce, 1 tablespoon of soy sauce, and 1 teaspoon of minced garlic. Then, mix well with chopsticks and marinate for 15 minutes for the meat to absorb the flavors.




Blanch the vegetables and vermicelli
Add about 300ml of water into the pot, place it on the stove and boil on high heat for about 10 minutes. When the water is boiling, first add the vegetables to blanch for about 1 minute and then remove them.
Next, continue to add all the vermicelli to the pot to blanch for about 5 minutes until the vermicelli is cooked, then remove it and place it in a bowl of ice water so the vermicelli maintains its chewiness and doesn’t stick together.




Make the sauce for stir-fried vermicelli
To make the sauce for stir-fried vermicelli, we will put in a bowl a mixture of: 6 tablespoons of soy sauce, 1 tablespoon of seasoning, 1 tablespoon of sugar, 2 tablespoons of cooking oil, and 1 tablespoon of roasted sesame. Use a spoon to stir well until the sugar is completely dissolved.




Stir-frying noodles
Place a frying pan on the stove, add 2 tablespoons of cooking oil, and turn on high heat. When the oil is hot, add garlic and sauté until fragrant, then add onions and bell peppers, stir-frying for about 3 minutes.
Next, add carrots and continue to stir for about another 3 minutes. After that, add all the marinated meat and mushrooms, stir quickly for 5 minutes until the meat is no longer red, then add the noodles.
Finally, add all the sauce and blanched greens into the pan and stir well to combine the ingredients, adjusting the seasoning to taste, then turn off the heat.
Serve the stir-fried noodles on a plate and enjoy.
