Prepare mushroom stems
Soak the dried shiitake mushroom stems overnight for about 5 hours until the mushrooms are soft, then rinse 2 – 3 times with water and drain.
Tip: You can buy good quality dried shiitake mushroom stems at stores that sell vegetarian food. -
Boil mushrooms
Boil 250ml of water, then cut lemongrass into small pieces and put them into the pot to boil with the softened mushroom stems for about 20 – 30 minutes on high heat, then remove and drain well.
Tip:
- To help the mushrooms eliminate odors better, you can boil them with lemongrass, as lemongrass is very effective in removing unpleasant smells.
- Alternatively, you can replace lemongrass with a few slices of ginger to eliminate the smell of mushrooms.
- If boiling once does not completely remove the smell, you should boil it 2 – 3 more times until the smell is gone! Because our dish won’t be delicious if it still smells like mushrooms.
