Brown rice noodles 50 gr Shiitake mushrooms 3 pieces Green onions A little Ginger A little Olive oil 2 tablespoons Soy sauce 2 tablespoons Sugar 1 teaspoon Fermented fruit vinegar 2 teaspoons Vegetarian oyster sauce 1 tablespoon Chili sauce 1 tablespoon Water 1 tablespoon

How to prepare Brown Rice Noodle Salad

  • Prepare the ingredients

    Soak the dried shiitake mushrooms in warm water for about 20 – 30 minutes until soft, then chop finely.

    Boil a pot of water on the stove to cook the noodles. When the water is boiling, add the brown rice noodles along with 1 tablespoon of olive oil to prevent them from sticking.

    Boil the noodles for about 5 – 10 minutes, then remove them and quickly rinse with clean water to keep the noodles chewy and delicious, then drain.

    Peel the ginger, chop it finely, and then mince it. For the green onions, wash them, cut off the roots, and chop them finely as well.

  • Prepare the noodle dressing

    In a bowl, mix the dressing ingredients for the noodles according to the following recipe: 2 tablespoons of soy sauce, 1 teaspoon of sugar, 2 teaspoons of fermented fruit vinegar, 1 tablespoon of vegetarian oyster sauce, 1 tablespoon of chili sauce, and 2 tablespoons of water. Use a spoon to stir the mixture until the ingredients are dissolved.

    Heat a pan on the stove, add 1 tablespoon of olive oil, then add minced onion and ginger to sauté until fragrant.

    Next, add finely chopped mushrooms and stir-fry for about 2 – 3 minutes, then add all the sauce mixture and sauté on low heat until the sauce thickens slightly, then turn off the heat.

    You put the brown rice noodles in a bowl, add a little shredded cucumber on top, and then drizzle with mushroom sauce. When eating, mix the brown rice noodles well so that they absorb the mushroom sauce evenly.
