Prepare the ingredients
Soak the dried shiitake mushrooms in warm water for about 20 – 30 minutes until soft, then chop finely.
Boil a pot of water on the stove to cook the noodles. When the water is boiling, add the brown rice noodles along with 1 tablespoon of olive oil to prevent them from sticking.
