How to choose fresh shrimp
- Prioritize buying fresh shrimp that have a transparent shell, a slight smell of seawater, and their legs and head firmly attached to the body.
- When buying, you should choose shrimp with their tails curled together, slightly curved bodies, firm flesh but not unusually plump.
- Do not buy shrimp with spread tails; the shell should not feel rough when pressed by hand and should not contain sand inside. This indicates that the shrimp is not fresh or has been injected with chemicals or water to make it appear plumper.
How to choose fresh and delicious purple cabbage
- When buying purple cabbage, you should choose heads that feel firm to the touch, with tightly rolled leaves and small stems that are not cracked or turning brown.
- Additionally, you can opt for heads with dark purple leaves, crisp and fresh, without yellow leaves or brown spots.
- Avoid purchasing heads that are bruised, have signs of slime, eaten by pests, or have an unusual odor.

Prepare the ingredients
Shrimp should be trimmed of antennae and the sharp parts on the head, then washed clean with cold water 2 – 3 times.
For the purple cabbage, cut it into strips, and for the bean sprouts, remove any spoiled stems and soak both in diluted salt water, then rinse and drain.

Stir-fry fish balls and hot pot balls
Add 2 tablespoons of cooking oil to the pot, wait until the oil is hot, then add 1 teaspoon of minced lemongrass and 1 teaspoon of minced garlic, sauté evenly over medium heat for about 1 minute until the garlic and lemongrass become fragrant.
Next, add 35g of fish cake, 35g of squid cake, and a small amount of hot pot balls (optional type) and stir-fry over medium heat for about 30 seconds until the fish balls and hot pot balls are firm.

Cook the hot pot broth
After stir-frying the fish balls and hot pot balls until fragrant, add 500ml of filtered water. Cook for about 2 minutes over medium heat until the broth boils.
Add 2 teaspoons of seasoning, 3 teaspoons of sugar, 2 tablespoons of tomato sauce, and 2 teaspoons of Korean chili powder, then stir well until the seasonings dissolve.

Dip shrimp, noodles, and vegetables
After the spices in the hot pot broth have dissolved, add 35g of sweet corn and 2 fresh shrimp, cooking for about 5 – 7 minutes until the shrimp are cooked. Then use a slotted spoon to remove all the fish balls, hot pot balls, sweet corn, and shrimp into a bowl.
Next, add 1 pack of instant noodles, blanching them in the hot pot broth for about 3 minutes until the noodles are just cooked, then remove them and place them into a heat-resistant paper cup.
Finally, add 50g of shredded purple cabbage and 25g of bean sprouts to the hot pot, blanch for about 2 minutes, then turn off the heat and use a slotted spoon to remove them.

Arrange the ingredients in order: purple cabbage, bean sprouts, shrimp, meatballs, hot pot balls, and sweet corn into a heat-resistant paper cup that has been pre-filled with blanched noodles.
