Black chicken 2 birds (about 500 gr) Small ginseng 2 roots Lotus root 1/2 root Lotus seeds 50 gr Roasted brown rice 50 gr Quail eggs 6 eggs Carrot 1/2 root Ginger 2 pieces Shallots 2 bulbs Oyster sauce 2 teaspoons Soy sauce 2 teaspoons Rice wine 2 tablespoons Common seasoning a little (seasoning powder/ salt/ pepper/ sugar)

  • Good black chicken will have a compact, firm body and small breast, with shiny black skin.
  • Fresh chicken meat should not have a rancid or foul smell.
  • Press the meat with your hand to check; if the meat is firm and elastic, it is good chicken. If the meat is mushy, slippery, deformed, or dented, do not buy it to avoid health issues.

How to choose fresh lotus root

  • You should choose lotus roots that are moderately large and short, with long spaces between the segments; this will ensure the lotus root is just cooked and has a delicious flavor.
  • Good lotus roots will be plump, without any bumps or dents on the surface, usually yellow in color, and have no strange smell.
  • Do not buy lotus roots with overly white skin, as they may have been soaked in chemicals.

How to choose fresh ginseng

  • You can use 2 – 3 year old ginseng to stew with black chicken instead of needing rare or expensive types of ginseng.
  • To choose good ginseng, select roots that are light yellow and bright, with taut skin, and a thick, uniformly elongated body.
  • The long ginseng roots should resemble legs, with many smaller roots growing around them.
  • Avoid choosing ginseng roots that are brownish, with wrinkled skin, and many broken roots.

How to prepare Black-boned Chicken Soup with Ginseng

  • Prepare and marinate black-boned chicken

    First, pluck all the remaining fine feathers from the black-boned chicken and rinse it thoroughly with diluted salt water to clean it. Next, cut off the chicken’s wings and legs.

    Then, peel the ginger and shallots, crush them, and put them in the bowl with the chicken along with 2 tablespoons of rice wine, and use your hands to rub the outside skin and the inside of the chicken’s belly to fully clean the chicken and eliminate any odors.

    After removing the odor, rinse it with cold water to get rid of the smell of rice wine.

    Once the black-boned chicken is cleaned, marinate it with 1 minced shallot, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, pepper, 1 teaspoon of salt, 2 teaspoons of oyster sauce, and 2 teaspoons of soy sauce.

    Remember to rub the ingredients evenly onto the chicken so that the chicken absorbs the seasoning. Then, let it sit and marinate for 20 minutes.

    Quail eggs are boiled until cooked and then peeled.

    Carrots and lotus root are peeled and then sliced into thin, bite-sized pieces.

    Lotus seeds are washed clean with water, and the bitter core is removed if necessary.

    The ginseng root is trimmed of any small roots and black roots, then thoroughly cleaned of dirt attached to the skin in a bowl of diluted saltwater.

    First, you put the lotus root into a pot of water and cook for 10 minutes over medium heat, then continue to add the ginseng and lotus seeds and cook for an additional 20 minutes.

    When the roots and lotus seeds start to soften, add the marinated chicken along with the quail eggs and roasted brown rice into the pot, cover and stew for 10 minutes.

    Then, you can adjust the seasoning to taste, add the carrots, cover again, and stew for an additional 10 to 15 minutes to complete the dish.
