Prepare and marinate black-boned chicken
First, pluck all the remaining fine feathers from the black-boned chicken and rinse it thoroughly with diluted salt water to clean it. Next, cut off the chicken’s wings and legs.
Then, peel the ginger and shallots, crush them, and put them in the bowl with the chicken along with 2 tablespoons of rice wine, and use your hands to rub the outside skin and the inside of the chicken’s belly to fully clean the chicken and eliminate any odors.
After removing the odor, rinse it with cold water to get rid of the smell of rice wine.
Once the black-boned chicken is cleaned, marinate it with 1 minced shallot, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, pepper, 1 teaspoon of salt, 2 teaspoons of oyster sauce, and 2 teaspoons of soy sauce.
Remember to rub the ingredients evenly onto the chicken so that the chicken absorbs the seasoning. Then, let it sit and marinate for 20 minutes.

First, you put the lotus root into a pot of water and cook for 10 minutes over medium heat, then continue to add the ginseng and lotus seeds and cook for an additional 20 minutes.
When the roots and lotus seeds start to soften, add the marinated chicken along with the quail eggs and roasted brown rice into the pot, cover and stew for 10 minutes.
Then, you can adjust the seasoning to taste, add the carrots, cover again, and stew for an additional 10 to 15 minutes to complete the dish.
