How to choose fresh mackerel
- You can identify fresh fish by observing the eyes; if the eyes are clear and slightly bulging, it indicates that the fish is still fresh. Avoid purchasing fish with sunken, cloudy eyes, as this is a sign that the fish has been refrigerated for many days.
- Observe the gills; if the gills are bright red and firmly attached to the fish, it indicates that the fish is still fresh.
- Fresh, good mackerel will have a flat, firm belly; you can feel it by gently pressing on the fish with your hand; if the flesh is still firm and elastic, the fish is still fresh and delicious.

How to prepare steamed mackerel

Prepare and marinate the mackerel
After purchasing, rinse the mackerel with diluted salt water to remove the fishy smell, then let the fish drain completely.
Next, marinate the fish for 15 – 20 minutes with a mixture of seasonings including: 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1 teaspoon of sugar, a little ground pepper, 1 teaspoon of garlic powder, 1/2 teaspoon of ginger powder, noting that during the marinating process, you should turn the fish over to ensure the seasoning is evenly absorbed.
Tip: To reduce the fishy smell, besides rinsing the fish with diluted salt water, you can also wash the fish with rice water or gently rub a layer of salt on the fish, then rinse again with clean water. -
Prepare the remaining ingredients
Vietnamese coriander after being washed should be cut into bite-sized pieces, while onion should be sliced thinly.
Pineapple after purchase should have the bitter core removed, then divide into 2 parts, one part chopped finely, and the other part sliced. Cucumber should also be sliced thinly to accompany the dish.
Chili should be sliced half into thin slices, and the remaining part chopped finely together with garlic and onion. Green onion should be cut into equal lengths of about 2 finger joints.

Making Fermented Fish Sauce
You put fermented fish sauce in a prepared bowl, then add minced lemongrass, garlic, and chili, seasoning with a little sugar to taste, finally mix well to complete the dipping sauce.

Steaming the Fish
First, place a layer of Vietnamese coriander on a porcelain plate, followed by a layer of onion and a few slices of chili so that when steaming the fish, it enhances the flavor and reduces the fishy smell. Finally, place the fish on top, making sure not to include the marinating liquid with the fish.
Add water to the steamer and turn on the heat, wait until the water boils, then place the prepared fish plate in, covering it with a layer of cloth so that the condensation does not drip back onto the fish, losing its delicious flavor. Fold the edges of the cloth and cover with a lid, steaming for 15 – 20 minutes.
After steaming for the required time, open the lid, remove the cloth, and add chopped green onions, Vietnamese coriander, and a little sliced chili. Cover the lid and steam for an additional 3 minutes.
