What is Oyakodon?

  • Oyakodon is a Donburi dish (a type of rice bowl) – a famous dish from Japan. Oyakodon has significant spiritual meaning as it is also understood as “parent-child Donburi”.
  • The ingredients for Oyakodon are very simple, including chicken, eggs, onions,… simmered in a sauce made from Shoyu and served over white rice.
  • With its very special meaning, Oyakodon is often served during festivals, especially on Mother’s Day. It is also a dish highly regarded in the “Land of the Rising Sun”.

  • To buy fresh chicken, you should choose chickens that have a rosy, shiny color, thin skin, and a light yellowish skin. The breast, back, and wing parts should have a deep yellow color.
  • Choose chickens that are of moderate size, compact but firm; if you press gently, you will feel the elasticity of the chicken meat.
  • You should choose chickens that have no smell, with skin that is not purple or showing signs of bruising. Conversely, you should not buy chickens that have a foul or fishy smell.
  • You should also avoid buying chickens that have red spots underneath the wings, as these are chickens that have been injected with water. Also, do not choose chickens with soft, mushy meat as these are chickens that have been kept for too long.

  • To buy good chicken eggs, you should choose eggs with an even-colored shell. Shine a light, flashlight, or sunlight through the egg to see the yolk in the center, the white is clear, with a light orange or pink hue.
  • Use your hand to feel the egg; it should feel rough. The surface of a fresh egg will have a thin white powdery coating.
  • Hold the egg close to your ear and shake it; a fresh egg will not make any noise. If the egg makes noise, it has been stored for too long and should not be purchased.
  • You also should not buy eggs that have a sour smell, or if the shell has black spots, as these are eggs that have been harvested for a long time or are about to spoil.

  • Prepare the ingredients

    Wash the chicken meat with water, remove bones and skin, drain, then cut into small pieces about 1 – 1.5cm thick. Put 1 egg into a bowl and beat well.

    Peel the onion, cut off the roots, wash with water, drain, then chop 1/2 of it into small pieces. Cut off the roots of the coriander, wash carefully, and chop into small pieces about 1cm, roughly 5g.

  • Make the sauce

    Pour 175ml of dashi, 23ml of mirin, 23ml of sake, 23ml of soy sauce, and 23g of white sugar into a measuring cup, then stir well until the sugar dissolves and the ingredients are mixed together.

  • Cook the chicken with the sauce

    Place a pan on the stove, heat it up, evenly spread 1/2 of the chopped onion over the pan, add 1/2 of the prepared sauce, then place 300g of prepped chicken on top of the pan and cook on high heat until boiling, then flip the chicken over, cover, and cook for an additional 5 – 7 minutes on low heat.

    Next, you open the lid of the pan, spread the eggs evenly in the pan, so that the meat and onions are covered evenly in the eggs, cover the lid again and cook for another 5 – 7 minutes.

    When the chicken and eggs are just cooked, sprinkle the prepared cilantro on top and turn off the heat. Scoop a bowl of white rice, then tilt the pan and slowly let the eggs from the pan cover the white rice.

    So the Oyakodon dish is completed, looking very eye-catching and appetizing! The aroma spreads, both the onions, chicken, and eggs are very tender, sweet, and go well with the white rice.
