- You should choose intestines that have small, plump tubes and a fresh pinkish-white color. The best intestines are from pigs that have just been slaughtered.
- When buying, you should squeeze a piece of the intestine to check the liquid inside; if the liquid inside is milky white and has no fishy smell, then it’s good intestines; otherwise, you shouldn’t buy it!
- Avoid buying intestines that have a bluish-white color, large tubes, and liquid inside that is off-white and gradually turning yellow.

Prepare the small intestine, stomach, and liver
Put the stomach and small intestine into a basin, add vinegar and rub all sides of the stomach and pork intestine.
After massaging, rinse the intestines thoroughly by pouring water into the inner tube, using your hand to stroke the tube so that the impurities inside are pushed out.
Repeat this process 2 – 3 times to clean the intestines and effectively eliminate odors.
How to clean pork intestines- For pork intestines, you can rub them with salt and lemon (or vinegar). Then boil a pot of water, add about 4 tablespoons of fish sauce, and boil the intestines for 3 minutes, then remove them and rinse with water.
- Another method is to cut the intestines into small segments about 2 finger lengths (for the stomach, cut in half), turn the small intestine inside out, remove any fat membranes and impurities inside, then use flour along with a little salt to rub for about 5 – 10 minutes and rinse with water.
