How to Choose Fresh Ingredients
How to Choose Good Beef Brisket
- Depending on the taste of your family members, you can choose to buy either the front or hind brisket according to your preference.
- The front brisket has more meat and fat, and the tendons are not large, making it more tender. The hind brisket, due to bearing more weight, will be tougher and chewier when enjoyed.
- The characteristic to choose fresh and delicious brisket is to look for briskets that have a bright red color, are dry, not watery, and have the distinctive smell of beef.
- Avoid buying briskets that are dark red, with dark yellow fat and large meat fibers, as these are from older cattle, which are usually tough and not tasty.
- Additionally, you can select other parts of the beef for cooking, but for this beef stew dish, it’s best to choose brisket as it contains fat and tendons that will taste better.
How to Choose Safe, Non-Toxic Potatoes
- When buying, you should prioritize selecting potatoes that feel firm in your hand, have a smooth and intact skin, without deep spots and black eyes.
- In addition, delicious potatoes are those that have equal size and weight and have an attractive bright yellow skin.
- To make the beef stew even tastier, you should not choose potatoes with white skin, as these potatoes do not have enough sweetness and are lower in nutrients.
- Potatoes that have sprouted and whose outer skin has turned green. These potatoes are in the sprouting stage and should not be eaten.
How to choose fresh, delicious, and safe carrots
- Delicious carrots are those that have a moderate size, a straight elongated shape towards the tail, a smooth skin, and feel firm and solid when held.
- Don’t choose carrots with wilted, bruised tops, or bodies that are bruised, watery, slimy, or have dark spots.
- Additionally, to enhance the taste and appeal of the beef stew, you should avoid selecting carrots that have thicker and larger roots and shoulders compared to the tails. Because these carrots are older, they will have more fibers and won’t be tasty.

- Method 2: Rub salt on the beef, let it sit for 5 minutes, then rinse with water.
- Method 3: Rub lemon on the beef for about 3 minutes, then rinse with water before cooking.

After washing, chop the tomatoes into small, bite-sized pieces. Peel the onion, wash it clean, and cut it into wedges.
Peel the garlic, crush and finely chop it, then divide it into two equal parts. Peel the ginger, wash it clean, and then finely chop it.
Next, add the diced beef to a bowl along with 1 tablespoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 tablespoon of sugar, 5g of red wine seasoning (about 1 teaspoon), 1/2 tablespoon of ground pepper, and 1/2 of the chopped garlic and ginger.
Then, use chopsticks to mix well, cover the bowl tightly with plastic wrap, and marinate for about 1 hour for the meat to absorb the spices evenly.

Cooking Beef Stew
Place a pan on the stove, add 3 tablespoons of cooking oil, wait until the oil is hot, then add 1/2 of the remaining minced garlic and sauté until fragrant and golden over high heat for about 20 seconds.
Next, add the marinated beef and stir-fry until it is browned for about 2 minutes on high heat, then add 30ml red wine and chopped tomatoes, stir-frying for another 2 minutes before turning off the heat.
Then, transfer the stir-fried meat to the pressure cooker, add 1/2 tablespoon of salt, 2 cinnamon sticks, and 700ml of water. Close the lid and simmer for 20 minutes.
Finally, release the steam valve to let out some steam, wait about 2 minutes, then open the lid to add potatoes and carrots.
Starch will help the dish become thicker and more flavorful, so dissolve 2 tablespoons of starch in 30ml of water and add it to the pot, then cover and simmer for another 10 minutes to complete.
Note:- During the entire cooking process in the pressure cooker, do not open the lid, even for tasting.
- Only release the valve when the cooking time is complete, then let it sit for about 2 – 3 minutes before opening the lid.

Final Product
Beef stew, once completed, is served in a bowl, enjoyed hot with vermicelli, bread, or hot rice, all of which are delicious. When eating, one can sense the fragrant aroma of star anise blending with a hint of sourness from the tomatoes and the tender, rich taste of the meat.
Additionally, the creamy, buttery flavor of the potatoes and the sweet, soft carrots also play a significant role in enhancing the dish’s taste, making it loved by everyone.
