How to choose fresh ingredients
How to choose fresh flatfish
- Fresh flatfish are those that are still alive, swimming well, with clear eyes, easily visible pupils, and not cloudy.
- When pressing lightly with your hand, the flesh should feel firm and elastic, not too soft or mushy.
- You should limit buying flatfish with dark brown gills, especially those that emit an unusual foul odor as they are flatfish that have been kept too long and will not taste good.
How to choose fresh and delicious pineapple
- Fresh and delicious pineapple are those with an eye-catching yellow color, possibly mixed with a bit of light green, and the crown is still fresh and tightly attached to the body, not separated.
- Typically, the more meaty fruits will have a round and short shape, especially having as many eyes as possible because that indicates naturally ripe pineapple that hasn’t been forced to ripen.
- It’s advisable to limit buying pineapple that emits a very strong smell as that indicates overripe pineapple that is fermenting and about to spoil; on the contrary, if there is no smell at all, it means the pineapple is not ripe enough.

-
Prepare the ingredients
First, for the 2 fish you bought, use scissors to cut off the gills and tail, while removing the blood inside the fish’s belly, then rub some salt on the entire surface of the fish for 3 – 5 minutes, rinse several times with clean water, and let it drain.
Peel the pineapple and remove the eyes, using a knife to cut off the core, then cut the pineapple into bite-sized pieces.
Clean the shallots, let them drain, and then crush them. For the small chili peppers, remove the stems, wash them clean, and let them drain.
Finally, remove the roots from the green onions, wash them directly under running water until clean, let them drain, and then chop finely.
-
Marinate the fish
Next, take a pan, then add 2 fish, lemongrass, 2 green onions, pineapple, 6 bird’s eye chilies, 2 tablespoons of fish sauce, 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, 1 teaspoon of chili powder, 1.5 tablespoons of cooking oil, and 1/2 teaspoon of ground pepper, then mix well and marinate the fish for about 10 minutes.
-
Cook the fish
Next, place the marinated fish on the stove and cook over medium heat for about 5 – 7 minutes.
When the fish starts to boil, add 120ml of water, just enough to cover the fish, cover the pot and cook for 20 – 25 minutes.
