How to choose delicious beef tendon

  • By the naked eye, fresh and delicious beef tendon usually has a pinkish-white color. When touched, the tendon should still be firm and chewy, with a certain elasticity, and no strange smell.
  • Absolutely do not buy and use tendons that are dry, have unusual colors such as yellow, pale white, or bluish, have an unusual foul smell, or leak yellow fluid, as these tendons may be old and in the process of decomposition.

    • Prepare the Ingredients

      You can buy raw or pre-cooked beef tendons for preparation, but whichever you choose, you need to clean them thoroughly.

      Peel and wash the ginger and red onion, then slice them.

      To clean the beef tendons, you can follow these steps:

      Wash the beef tendons under cold water to remove dirt and impurities. Use a sharp knife to scrape off any impurities, fat, and membranes from the outside of the tendons. Prepare a pot of boiling water and soak the beef tendons in it. Let them sit in boiling water for about 2-3 minutes to soften and remove dust.

      After that, rinse the tendons in cold water to clean and cool them down. If there is still fat or impurities stuck, you can use a stiff brush or scrubber to gently scrub. Next, soak the tendons in lemon juice or vinegar for about 15-30 minutes to eliminate odors and soften the beef tendons, then rinse them in clean water.

    • Boil the beef tendon

      After cleaning the beef tendon, you place it in a pot to boil with a little ginger and shallots to enhance the aroma, you can adjust the boiling time according to your desired tenderness and chewiness.

      While waiting for the beef tendon to boil, you can prepare the fish sauce, by adding 2 bowls of water, 3 bowls of sugar, 3 bowls of fish sauce, and 1 bowl of vinegar to a pot, boil until the sugar dissolves completely and let it cool.

      After boiling the beef tendon, take it out to cool and use a dehydrator to dry the surface of the beef tendon. Slice the shallots and also use the dehydrator to dry them.
