How to choose good jumping snails
- Choose snails that are still alive. Gently touch the snail’s shell; if the snail closes its shell tightly, it’s alive; otherwise, it’s dead.
- Live snails usually have a light smell of mud, not foul. Dead snails often have a very unpleasant rotten smell.
- Fat, tasty snails usually have their shells close to the edge of the outer shell. Those with their shells deeply recessed are thin snails and not tasty.
How to Cook Steamed Jumping Snails with Lemongrass

Prepare the jumping snails
After purchasing the snails, wash them thoroughly and soak them in rice water for 1 – 2 hours to help the snails release all the dirt quickly.
If you don’t have rice water, you can soak the snails in salted water for about 3 hours, changing the water approximately 3 to 4 times during the soaking period.
How to Clean Jumping Snails from Sand
- You should soak the snails in a metal basin/bowl, as snails will release all the dirt when in contact with metal. If you don’t have a metal basin/bowl, you can put a few metal utensils like knives or forks in the basin and continue soaking the snails for about 1 – 2 hours.
- Soaking the snails in rice water will help them release all the dirt quickly. If you don’t have rice water prepared in time, you can soak them in cold water and add about 3 – 4 chili peppers for about 1 – 2 hours.
- You can also soak the snails in a mixture of lemon, vinegar, and chili. Just mix these ingredients together and soak the snails; they will quickly release the dirt for cooking.

Prepare the other ingredients
Lemongrass should be washed thoroughly, then cut into 2 or 3 sections, leaving a little lemongrass to slice. The chili should be washed clean.

Sauté Lemongrass and Chili
Place a pan on the stove and add about 1 liter of water to the pan, then add lemongrass and chili and cook for about 3 minutes.
Continue by adding 1 teaspoon of sugar, 1 teaspoon of MSG, and 1 teaspoon of salt.
