How to make Stir-fried Seafood Pho

Prepare the ingredients
Shrimp should be soaked in diluted salt water for about 3 minutes to eliminate the fishy smell, then peel off the head and shell, use a knife to make a cut along the back of the shrimp, remove the shrimp vein, and rinse well with water, then drain.
Clean the squid thoroughly with water, then remove the bones and internal organs. Use a knife to cut the squid body into small bite-sized pieces, soak in diluted salt water for about 2 minutes, then rinse again with clean water.
For scallops, use a sharp knife to open the shell, then gently slide the knife underneath the meat to remove it from the shell. Next, remove the dark meat, muscle fibers, small cartilage, and the stomach surrounding the white meat of the scallop. Then, rinse the scallop meat with salt water and vinegar, and rinse again with cold water, then drain.
Cut off the roots of enoki mushrooms, wash them clean, and separate them into strands. Peel the carrot and cut it into thin, bite-sized strips. Cut the green onions into segments about the length of a finger. Rinse the bean sprouts and drain.
Tip:
- To make the dish look more appealing and beautiful, when removing the shrimp vein, you should make a deep cut about 1/2 the length of the shrimp so that when stir-frying, the back of the shrimp spreads out beautifully.
- For the squid, use a knife to make diagonal cuts on the inside of the squid body so that when cooked, the squid will expand into a beautiful flower shape.

Mix the sauce
Add 2 teaspoons of minced chili, 1/2 teaspoon of sugar, 1 tablespoon of soy sauce, 2 teaspoons of oyster sauce, 2 teaspoons of fish sauce, 1 teaspoon of sesame oil, 2 teaspoons of sweet soy sauce, and 2 tablespoons of chicken broth into a bowl, and stir well for the ingredients to dissolve.

Blanch the shrimp and squid
Boil 300ml of water, then add the squid and shrimp in turn, blanch for about 2 minutes over high heat until the squid firms up and the shrimp turns red, then remove them, soak in cold water for about 3 minutes, and then drain.
Tip: To keep the shrimp and squid crispy and delicious, remember to soak them in cold water immediately after blanching! -
Stir-fry the ingredients
Add 2 teaspoons of minced shallots, 1 teaspoon of minced garlic, and 2 tablespoons of cooking oil to the pan, sautéing until the shallots and garlic are fragrant. Then add the scallops, stir-frying over medium heat for about 5 minutes until the scallop meat firms up, then add the blanched shrimp and squid.
Continue to stir-fry over medium heat for about 2 more minutes, then add 1.5 tablespoons of the prepared sauce. Stir well and add the enoki mushrooms and shredded carrots, mixing for about 3 minutes over high heat until the ingredients are cooked evenly, then transfer to a plate.

Blanching and Stir-frying Noodles with Ingredients
Put the dry noodles into a pot of boiling water and blanch for about 20 seconds, then take them out onto a plate, using scissors to cut them into bite-sized pieces.
Next, place a pan on the stove and add 2 tablespoons of cooking oil along with 1 teaspoon of minced shallots and 1/2 teaspoon of minced garlic into the pan. Sauté until fragrant, then add the noodles along with the remaining sauce.
Stir-fry over medium heat for about 3 minutes until the noodles are fluffy and evenly colored, then add the sautéed ingredients. Mix well for about 1 minute until everything is combined. Next, add the bean sprouts and green onions, stir well, then taste and adjust the seasoning to your liking before turning off the heat.
