How to choose fresh and delicious pork belly
- First, you must choose fresh meat. The color of good meat is bright pink, not too red and not too pale. Meat that is pale, greenish, and has a foul smell should not be chosen.
- Pork that is firm and has high elasticity is good meat. You can test by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak water or liquid, it is good.
- You should choose pork thigh or belly that has both lean and fatty parts so that your dish does not become dry or overly greasy.
How to make Mixed Spring Rolls

Prepare and boil the meat
The pork you buy should be soaked in diluted saltwater for about 5 – 10 minutes, then massage it thoroughly, and rinse it under clean running water multiple times.
If you don’t have time to soak, you can use salt or alcohol to rub on the meat surface and then massage the piece of meat. After that, rinse it again with clean water.
Place the piece of meat in a colander to drain completely; you can use paper towels or a dry cloth to wipe off any remaining moisture on the meat.
Bring a pot of water to a boil with a bit of smashed ginger, a shallot, or the green part of a scallion. When the water is boiling, add the piece of meat and boil for about 25 – 30 minutes until the meat is cooked.
Tip: You should ensure the water covers the meat so that it cooks evenly and doesn’t dry out. Additionally, you can add a bit of vinegar or alcohol to the boiling water to eliminate the smell of the meat.When the meat is cooked, remove it and place it in a bowl of cold water to cool quickly and have a certain firmness. Proceed to slice the meat into small pieces according to your and your family’s preferences.

Prepare other ingredients
The carrots you buy should be peeled clean, then washed with clean water and placed in a basket to drain. After that, cut them into thin strips.
Peel the cucumber, removing the old or dirty skin, cut off both ends, and wash it thoroughly with clean water. Like the carrots, cut the cucumber into thin strips.
Tip: For cucumbers, you can remove the seeds so that when eating, it will feel crunchier and tastier!As for the Vietnamese pork sausage, cut it into slices and then cut it into thin strips for easy eating.

Make the dipping sauce
In a bowl, add 3 tablespoons of sugar, 3 tablespoons of good fish sauce, 5 tablespoons of clean water, and 2 tablespoons of lemon juice. Use a spoon to stir well until the mixture dissolves.
You can adjust the ratio of the above ingredients to suit your family’s taste. Additionally, you can add chili if you like it spicy!

Fried Eggs
Crack 3 eggs into a bowl, add 1/2 teaspoon of seasoning and use a whisk to beat the eggs until well mixed. If you don’t have a whisk, you can use chopsticks or a fork instead.
Put a pan on the stove and add 1 tablespoon of cooking oil, then heat it up. When the oil is hot, pour the egg mixture into the pan and fry over low or medium heat until the eggs are cooked through, then turn off the heat.
Tip- Fried eggs are used to eat with spring rolls, so you don’t need to season them with too many spices because we will also have dipping sauce.
- Don’t add too much oil when frying the eggs. Too much oil will make the fried eggs soft, greasy, and wet when eaten with spring rolls, which won’t taste good and can be very unappetizing.
