How to choose fresh green sticky rice
- When buying green sticky rice, you should choose the ones that are light green because if the sticky rice is slightly yellow, it is old sticky rice, or if it is bright green, it may have been dyed or treated with chemicals.
- Fresh and delicious sticky rice has a distinctive fragrant smell, and the grains are separate and not sticking together.
- To choose good sticky rice, pick grains made from regular glutinous rice that are firm, thin, and chewy. You can test the sticky rice by biting lightly; if it is slightly chewy with a nutty and fresh taste, then it is good sticky rice.
How to choose good mung beans
- You should choose mung beans that are shiny, bright yellow, and have uniform size and color.
- Check the freshness of the mung beans by pressing your finger into the bean; if the bean is crunchy, easy to break but does not create many small crumbs, then it is good mung beans.
- Fresh mung beans usually have a light, distinctive fragrance of mung beans.

Wash and cook the mung beans
For the mung beans you bought, rinse them clean and soak for 1 – 3 hours. After that, take out the mung beans and place them in a basket to drain.
Put a pot on the stove, add all the soaked mung beans, pour in enough water to cover the beans, then add 1/2 teaspoon of salt and cook the beans on low heat until they are soft.
When the mung beans are cooked, transfer them to a bowl and mash them with a spoon or fork.

Mix the flat rice mixture
Place the tofu in a bowl and mash it. Then, add the mashed mung beans along with 50g of flat rice and mix well.
Add finely chopped cilantro, 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of pepper, 15g of tapioca flour, and mix well to combine all the ingredients.
Tip: You should use your hands to mix the rice from the bottom and press down from the top to make the rice stickier! -
Shape the rice roll
You take a small amount of the rice roll mixture in your hand, roll it into a ball, and then gently flatten it.
Next, coat the rice roll ball evenly with the intact rice flakes and prepare to fry.
