How to make Chrismas fruit cake

Cook the dried fruit alcohol
First, take a pot and add 226gr unsalted butter, 100gr brown sugar, 45gr molasses, 200gr raisins, 200gr dried blueberries, and 180ml rum, then place it on the stove to cook over low heat for about 10 – 13 minutes.
When the mixture boils and becomes slightly thick, and the ingredients are soft, you turn off the heat and remove the pot from the stove to cool.

Mixing dry ingredients
You gradually add to the bowl the ingredients including 228g cake flour, 5g baking powder, 5g cinnamon, 5g Allspice, 1/2 teaspoon of salt, the zest of 1 orange and 1 lemon that has been finely grated.
Then, you use a whisk to gently stir to combine the ingredients together.
Tip: To avoid clumping when mixing the flour, you should perform this dry mixing step separately! -
Beating the eggs
You crack 3 eggs into a bowl, using a whisk to stir in one direction for about 3 – 4 minutes, until the yolks and whites are combined.
Tip: If you want the baked cake to be more delicious, you should beat the eggs until they are well mixed! -
Complete the cake batter
When the fruit liquor pot has cooled, add 200g of dried plums, 100g of dried date seeds, and 75g of walnut seeds (all chopped) into it, and mix well using a flat spatula.
Then, add the beaten eggs into the mixture and stir again. Next, add all the dry flour mixture into it, continuing to mix until all the ingredients are well combined.
Finally, line the bottom of a specialized round mold with parchment paper, then pour in the remaining cake batter.
To prevent the cake from being uneven, lift the mold with your hands and gently tap it down on a flat surface about 5 – 6 times.
Tip: To avoid uneven distribution of ingredients, such as having too much fruit in one area and none in another, make sure to mix thoroughly! -
Baking the cake
Once the cake batter is ready, you need to preheat the oven to 200 degrees Celsius for about 10 – 15 minutes.
Then, carefully place the cake mold in the oven and bake at 160 degrees Celsius for 75 – 90 minutes. When the cake is evenly cooked, turn off the oven, slowly take the cake out, let it cool for 5 minutes, and then remove it from the mold.
Finally, take a cup and mix 15g apricot jam with 5ml of hot water using a spoon. Next, use a special brush to spread it evenly over the entire surface of the cake, then use a knife to cut the cake and serve it on a plate.
Tip: To prevent the cake surface from burning, you can place a sheet of aluminum foil on top during the first 50 minutes of baking! -
