- Avoid selecting fruits that are overly soft or bruised.
- Limit choosing fruits with shiny, underdeveloped skins, thick, and attractive skins as they may have been chemically treated for preservation.

How to make fragrant banana roll candy
-
Drying the bananas
Peel the bananas and place them on a clean tray, then expose them to the sun for a day to make the bananas firmer and chewier. Dry until the bananas look yellow and slightly bruised.
At the same time, prepare 6 pieces of puffed sticky rice cakes (pre-baked), expose them to dew overnight to soften, then store them in a bag before using them to roll the bananas.
-
Mashing the bananas
Place each banana on the cutting board, then use the flat side of a knife to mash the bananas and put them into a large bowl.
Tip: Do not use a blender to mash the bananas as this method will make the banana candy not delicious. The banana fibers will break, causing the banana candy to not be chewy. -
Marinating the bananas
First, you need to prepare the ingredients as follows:
- Ginger: peel and slice into thin strips.
- Pineapple: peel, slice, and crush.
- Lime: squeeze to extract the juice.
Add the following spices to the bowl of bananas: 600g of granulated sugar, crushed pineapple, sliced ginger, and lime juice, and mix well until the sugar melts for about 3 hours or more.
Tip: When marinating the bananas and letting them sit overnight, you should cover them tightly and place them in the refrigerator’s cool compartment. -
Roasted peanuts and sesame
Place a hot pan on the stove over medium heat, add the peanuts to roast until the skins crack. After that, roast the sesame over low heat until it turns a nice golden color.
-
Cook bananas
Place a pan on the stove to cook the bananas over medium heat until the sugar dissolves completely. After 15 minutes, reduce the heat to low and continue stirring the bananas with chopsticks until the banana mixture thickens and darkens in color, then start checking.
Prepare a bowl of diluted salt water, scoop a small amount of the banana mixture into the bowl to check if the banana candy is done? If the candy holds together, is not falling apart, and is chewy and soft, then it is done.
At this point, quickly add all the roasted peanuts (peeled) and roasted sesame, mix well and turn off the heat. Do not leave it too long as it may cause the candy to burn and become bitter.
-
Rolling Banana Candy
Place a piece of plastic wrap on a clean flat surface, lay a layer of puffed sticky rice (that has been dew-dried), then scoop the banana candy and spread it evenly on the rice cake.
After that, roll the banana cake tightly while compressing it.
Finally, cut the candy into bite-sized pieces. That’s it!
Note: You should try to roll and compress tightly while the banana mixture is still warm, so the banana candy will be more beautiful and firmer. -
Finished Product
The rolled banana candy is fragrant, very chewy, with a rich sweetness, the nutty flavor of peanuts and roasted sesame, the aroma of ginger, and somewhere a hint of the sweet and sour taste of pineapple. This is definitely a favorite candy not only for adults but also for young people!
The rolled banana candy is used to treat guests visiting at home, or to munch on while working or chatting—what could be better?
