How to choose coconuts for delicious milk

- Mature coconuts usually have a dark brown shell, with dry fibers that are slightly coarse and easy to peel. Choose coconuts with thick, firm flesh that is opaque white.

How to Make Coconut Milk
-
Prepare the Coconut Flesh
After purchasing the coconut, cut it in half, then separate the coconut flesh from the shell and rinse it clean. Next, use a knife to peel off the thin brown skin stuck to the coconut flesh.
-
Cook the Coconut Flesh with Pandan Leaves
Wash the pandan leaves and put them in a pot with about 1 liter of water, then bring to a boil to extract the green color from the leaves. Once the water is boiling and has turned green, turn off the heat and let the water cool.
After peeling the coconut flesh clean, cut it into thin slices, then place it in the pot of pandan water for about 10 minutes to allow the coconut to absorb the pandan flavor. This is to create a fragrant aroma for the coconut milk.
-
Blend and strain coconut milk
After soaking, take 1/2 of the coconut flesh and put it into a blender, then pour the pandan water into the blender until it is about 2/3 full, and then proceed to blend until smooth.
Then use a sieve to strain and collect the coconut milk.
Next, put the strained coconut pulp back into the blender, add a little more fresh water, and blend again. After that, strain the liquid as before and mix it with the previously strained coconut milk.
Tip: If you want to drink condensed milk, you don’t need to blend and strain the coconut pulp again; just use the first coconut milk to make the milk! -
Cook the coconut milk
Pour the strained coconut milk into a pot, then add 1 tablespoon of condensed milk and 3 tablespoons of sugar (you can adjust the amount of sugar according to your preference).
Then cook this mixture for about 5 minutes, keeping the heat medium. Note that you should only heat this mixture and not bring it to a boil!
