How to choose fresh and delicious durian
- Shape: Fruits that are slightly misshapen will be of better quality than large, round ones.
- Stem: Choose fruits with fresh stems that have a strong fragrance. You can gently press the stem with your finger; if it feels wet, then the stem is still fresh.
- Durian spines: Choose fruits with fresh-looking spines that are green, firm, and widely spread.
- Durian segments: Naturally ripened durian is easy to separate, with bright yellow segments that are soft, smooth, and fatty. In contrast, chemically ripened durian is hard to separate, and the flesh is often grainy and pale yellow.
- Aroma: Naturally ripe durian has a strong fragrance that can be smelled from a distance. Chemically treated durian will lack the characteristic strong aroma, and sometimes may have no smell at all.

How to Make Durian Tart

Mixing the Dough
Add 500g of unsalted butter and 60g of sugar into a mixing bowl. Use a mixer to blend the mixture well, or you can place the mixture in a dough mixer.
Next, add one egg, 1 teaspoon of vanilla extract, and continue mixing at high speed until the mixture is well combined.
Finally, add 500g of flour and mix until the mixture forms a uniform dough that no longer sticks to the bowl, then turn off the mixer.

Kneading the Dough and Shaping
Sprinkle some flour on the table to prevent sticking while kneading the dough. Then divide the dough into two equal parts.
Next, knead each piece of dough evenly, then sprinkle some flour on top, using a rolling pin to flatten it.
Use a 6cm round removable bottom mold to cut the dough. Next, place the cut dough into the bottom of the mold, using the leftover dough to wrap around the sides, pressing gently to shape the tart.
Then, use a fork to prick the surface of the tart.

Bake the tart shell
Preheat the oven to 160 degrees Celsius for 10 minutes to stabilize the oven temperature before baking the tart.
Place the tart in the baking tray and bake at 180 degrees Celsius for 15 – 20 minutes.
Tip: You can use a ceramic baking dish to stabilize and create a nicer shape for the tart shell. -
Prepare the durian
Remove the seed from the durian, and put the durian flesh into a mixing bowl. Use a spoon to mash the durian.

Mix the durian cream cheese
Cut 200g of cream cheese into small pieces, then add it to a mixing bowl, followed by 60g of sugar. Whip the mixture until smooth.
Next, add about 150g of mashed durian along with 2 egg yolks into the mixing bowl. Mix until the mixture is smooth and creamy.
Tip: Remember to keep 2 egg whites for the next step. -
Whip egg whites and finish the cream
First, whip 2 egg whites until small bubbles like soap appear.
Next, add about 10g of sugar, and whip until the mixture is soft and fluffy.
Add the whipped egg whites to the durian mixture, using a flat spatula to mix the mixture evenly.

Baking the cake
After baking the crust, let it cool and place it in the refrigerator for about 1 – 2 hours to firm up the crust.
Then, fill the inside of the cake with durian cream.
Finally, place the cake in the oven at a temperature of 185 degrees Celsius for 10 minutes, and you have completed the durian tart.
