How to choose delicious green sticky rice
- When buying green sticky rice, you should choose the one that has a light green color because if it has a slightly yellowish green color, it indicates that the rice is old, or if it is bright green, it means it has been dyed or treated with chemicals.
- Fresh and delicious sticky rice has a distinctive fragrant smell, and the grains should be fluffy and not stick together. To make your sticky rice yogurt tastier, choose round, plump grains instead of flat ones.
- To choose quality sticky rice, select grains made from high-quality glutinous rice that are firm and chewy. You can test the rice by lightly biting it; if it is slightly chewy with a nutty and refreshing taste, then it is good sticky rice.

Cook green rice pudding
Put 1.8 – 2 liters of water, 400g of sugar, 2g of salt, and 3 pandan leaves into a pot and boil to make sugar syrup.
At this point, stir the mixture of 120g of tapioca flour and 150ml of water until dissolved.
When the sugar syrup has dissolved, slowly add the tapioca flour mixture while stirring. Continue to cook on low heat for about 3 – 5 minutes until the tapioca flour is transparent and the sugar mixture thickens.
Next, wash 300g of green rice and let it drain, then add it to the tapioca sugar syrup and stir well for about 10 minutes before letting the rice puff up and the pudding cool down.
Note:- Do not wash or soak the rice beforehand as it will puff up and break when cooked. You should only wash the rice right before cooking the pudding!
- If you want the green rice pudding to have a fragrant aroma and a more appealing green color, you can add 1 – 2 drops of pandan essence.
-
Pour into jars and chill
Put the green rice cake into jars, filling each jar with about 1/3 to 1/2 of the jar!
Stir the yogurt well after it has been set and pour it into the jars containing the green rice cake.
Place the jars of yogurt in the refrigerator for at least 1 day before consuming.
-
Final product
The green rice yogurt is thick and smooth, combining the tart and mildly sweet thick yogurt with the chewy, fragrant, and nutty young rice, providing a much more delightful experience compared to regular yogurt.
On a hot summer day, having a jar of yogurt like this to enjoy is just perfect, right?

Making Yogurt
First, prepare a multi-function blender, add 1 box of Laughing Cow cheese and 2/3 box of condensed milk into the blender. Then press the button to blend until the cheese and condensed milk are thoroughly mixed.
After blending, pour the mixture into a pot, then add 1 liter of unsweetened milk into the pot. Use a whisk to stir well so that the fresh milk and cheese blend together. Then turn on the stove and cook on low heat for about 10 minutes. When the mixture starts to boil, turn off the heat and wait for it to cool down a bit, then add 2 jars of yogurt into the pot and stir well.
-
Yogurt incubation
After preparing the yogurt mixture, you bring the yogurt to incubate. Note that the jar for incubating yogurt should be scalded with boiling water and then dried or completely wiped dry before pouring the yogurt into it.
Once the jar is dry, pour the yogurt mixture in and cover the mouth of the jar with plastic wrap, then take it for incubation, which lasts about 8 – 10 hours. For the water used to incubate the yogurt, mix according to the formula of 1 liter of hot water and 2 liters of cold water. You can incubate the yogurt in an ice box or foam box; pour water into the box and then place the yogurt jar in to incubate. It’s best to use a tall jar for incubation so that the yogurt mixture is at the middle level and does not exceed the jar, preventing the yogurt from getting water.
