What is Haupia Coconut Cake? Origin of Haupia Cake

  • Haupia is a traditional sweet cake, a famous specialty, very popular in Hawaii.
  • With main ingredients such as: corn starch, coconut milk, sugar,… Haupia brings a natural sweetness along with a chewy, smooth texture, making it very suitable for making dessert or snack.
  • It is known that Haupia cake appeared when the people of Hawaii learned to use coconut as an ingredient in their daily recipes.
  • After World War I, this type of cake gradually became popular and was used as a perfect white cake in wedding parties.

How to Make Haupia Coconut Cake

  • Stir the coconut milk mixture

    Prepare a small pot, add 90g of white sugar, 50g of corn starch, 1/2 teaspoon of vanilla, 1/4 teaspoon of salt, then slowly pour 750ml of thick coconut milk into it.

    Use a whisk to beat thoroughly so that the ingredients blend together.

  • Simmer the coconut milk mixture

    After stirring the coconut milk mixture, place the pot on the stove and simmer the mixture over low heat for about 8 – 10 minutes. Next, use a ladle to stir the mixture until you see it boil and thicken, then turn off the heat and remove the pot.

    Pour the coconut milk mixture into about 2/3 of a square glass mold, then cover it with a clean cloth and place it in the refrigerator for about 1 hour.

  • Whipping the cream mixture

    First, prepare a bowl and add 40g of powdered whipping cream into it. Next, pour in 90ml of cold fresh milk (you can substitute with coconut milk or cold water) and use a spoon to whip the mixture evenly.

    Whip until the cream mixture thickens and becomes soft. Finally, add a bit of food coloring and stir well for about 1 – 2 minutes to complete the cream mixture.

    Tip: If you have liquid whipping cream, you can substitute it for this mixture. For powdered whipping cream, you need to whip it with cold fresh milk or cold water.

  • Pour into the mold and shape the cake

    Take the mold containing the coconut cream mixture out of the refrigerator. Then, pour the whipped cream into it. Use a flat spatula to spread the whipped cream evenly to the sides, then roll it to make the surface of the cake flat and smooth.

    Next, place the cake mold in the freezer for about 1 hour to allow the whipped cream to set.

    Finally, take it out, sprinkle an additional 20g of dried coconut on top, use a knife to cut the cake into bite-sized squares, and get ready to enjoy!

    The Haupia coconut cake has 2 layers that look really eye-catching. The top layer of whipped cream is a vibrant green color, while the coconut base layer below is a pure white.
