  • Good pumpkins usually have a yellow-orange color, mixed with dark green, yellow flesh, and a characteristic sweet flavor with a relatively chewy texture.
  • Choose heavy, firm pumpkins with smooth skin, a stem about 2 – 5cm long, and still fresh, not wilted.
  • Avoid choosing pumpkins with short stems as they tend to spoil faster, and do not buy pumpkins with scratched skin that feel soft and rough when touched.

  • Choose pieces of meat that have a light pink, bright color, a shiny surface, and are slightly firm. Avoid buying pieces that are dark as they are no longer fresh.
  • You should select chicken breast pieces that feel elastic when pressed, moist, not dry, dripping, or falling apart.
  • Absolutely do not buy chicken breast that is pure white or has white spots appearing as these indicate meat that has been affected by chemicals and growth hormones.
  • When buying pre-packaged chicken breast, pay attention to the quality of the outer packaging and the expiration date to avoid purchasing non-fresh pieces.

How to make Pumpkin Cake with Meat Filling

  • Prepare the ingredients

    Soak the chicken breast in diluted salt water for about 15 minutes, then rinse it clean and cut it into small pieces.

    Dried wood ear mushrooms soak in warm water for about 10 minutes until they swell, then take them out, cut off the stems, rinse, and chop them finely.

    For the pumpkin, peel it, rinse it briefly in water, and cut it into small cubes. Next, steam the pumpkin over medium heat for 15 minutes until it is soft, then take it out onto a plate.

  • Make the dough

    Put 200gr all-purpose flour, 50ml of unsweetened fresh milk, 1 chicken egg, 1/2 teaspoon of salt, and freshly steamed pumpkin into a bowl. Then, use your hands to knead the mixture until the dough forms a smooth, non-sticky mass.

    Next, cover the dough tightly with plastic wrap and let it rest for about 30 minutes.

  • Make the filling

    Put chicken breast into a blender and blend on high for about 2 – 3 minutes, then transfer it to a plate. Next, also blend the black mushrooms on high for about 2 minutes.

    Place a pan on the stove with 1 tablespoon of cooking oil and heat it over medium heat. When the oil is hot, add the blended mixture to the pan and stir-fry over high heat for about 3 minutes until the filling is cooked and soft.

    Then, add 1 tablespoon of oyster sauce, 1/2 tablespoon of fish sauce, 1 teaspoon of seasoning, 1/2 teaspoon of ground pepper into the pan, stir for about 30 seconds, adjust the seasoning to taste, and then turn off the heat.

  • Shaping the cake

    Use a rolling pin to roll the dough thin, then use a round cutter or the rim of a glass to cut the dough into equal round pieces.

    Next, place the filling in the center, fold it over, and use a fork to press around the outer edge to seal the cake.

  • Steaming the cake

    Arrange the cakes in a steamer, then place the steamer over a pot of boiling water, cover tightly and steam for 15 minutes over medium heat. After steaming, let the cakes cool for about 5 minutes before taking them out to enjoy.

    Tip: To prevent the cakes from getting soggy, remember to cover the pot with a thin cloth before placing the lid on. This method will help keep the steam from dripping onto the cakes while steaming.
