How to choose fresh ingredients

How to choose fresh shrimp

  • Shrimp shell: Choose shrimp with a transparent outer shell that has a distinctive seafood smell, not sour or rotten, without dark patches or inconsistent colors. The outer shell of the shrimp should be dry, not slimy.
  • Shape of the shrimp: Fresh shrimp will have a straight body, while shrimp that have been stored for a long time will curl up. The body of the shrimp should be firm, not soft and mushy.
  • Shrimp head, tail, and legs: Fresh shrimp will have their head, legs, and tail firmly attached to the body, with the tail folded together. If the tail of the shrimp is spread out, it may have been injected with impurities. Do not choose shrimp with heads, legs, or tails turning black, as these are shrimp that have been stored for too long and are not fresh.

How to choose delicious octopus

  • For live octopus: Choose those with clear eyes, moving quickly and flexibly. Do not buy those that move slowly and have dull eyes.
  • For frozen octopus: Choose ones that have a natural grayish-brown color, not too dark or too light. Additionally, freshly frozen octopus will have bright white meat, smooth skin, and will not be swollen.

How to choose fresh clams

  • Choose those with hard shells, tightly closed mouths, and feel heavy in hand. If the clam has a foul smell, feels very light, and can be easily pried open, it means the clam is dead.
  • For clams that are slightly open, if you touch them and they close their mouth again, it indicates that they are still alive and fresh.

How to Prepare Thai Seafood Sauce

  • Preparing the Seafood

    Clean the clams and soak them in diluted salt water with a few slices of chili. Soak for about 1 – 2 hours, this way the clams will be free of sand and dirt inside.

    Clean the octopus and soak it for 5 minutes in diluted salt water to eliminate the fishy smell. After that, rinse the octopus again and cut it into small bite-sized pieces.

    Clean the shrimp, peel the shell, remove the black vein, then rinse well and drain.

    How to Clean Clams Thoroughly, Removing All Sand:

    • You can soak the clams in a bowl of cold water with a few ice cubes to help them release sand faster. Usually, it only takes 10 minutes to have clean clams ready for cooking.
    • You can soak the clams in a bowl of saltwater with added chili powder/sliced chili for about 3 hours.
    • Additionally, soaking clams in a bowl of salt water with crushed ginger or rice washing water also helps them quickly release sand and dirt.

    Quick Ways to Remove the Shrimp’s Intestine:

    • Method 1: Peel the head and shell of the shrimp from the legs to the tail, using two fingers to hold the last segment tightly, then pull it out. Next, use a knife to make a shallow cut along the back of the shrimp to expose the black vein and remove it with a toothpick.
    • Method 2: After cleaning the shrimp, insert a toothpick into the neck of the shrimp and pull out the black vein to remove it.
    • Method 3: Clean the shrimp, then use scissors to cut along the shell to expose the black vein, then rinse under running water until clean.

  • Boiling seafood

    You place a pot on the stove, turn on medium heat, add 1 liter of water, 1 tablespoon of cooking wine, bring to a boil, then add the seafood and boil for 3 – 5 minutes before removing it to a bowl.

  • Making Thai sauce

    You add to a bowl 3 tablespoons of sugar, 4 tablespoons of fish sauce, 2 tablespoons of lime juice, 3 minced garlic cloves, 2 chopped chilies, 1 tablespoon of chili powder, and 1 tablespoon of chili sauce.

    Next, add 5 sliced shallots, 3 smashed lemongrass stalks cut small, and 5 chopped cilantro stems, then gently stir to dissolve the sugar.

    Add Thai sauce to the bowl of seafood, mix gently, and you can enjoy it right away or let it sit for 15 minutes for the seafood to absorb the flavors.
