Ingredients for Vegetarian Pillow Cake For 8 pieces

Flour 200 gr Cassava 50 gr Wood ear mushrooms 50 gr Shiitake mushrooms 50 gr Vegetarian fish 50 gr Green onions 50 gr Margarine 2 teaspoons Salt 1/3 teaspoon Sugar 2 teaspoons Vegetarian seasoning 1 teaspoon Pepper 1/2 teaspoon

  • Choose large, thick ears with few small mushrooms growing at the base.
  • No signs of mold.
  • The top of the mushroom should be a dark amber color, slightly shiny, and the underside should resemble coffee with milk.

  • Choose mushrooms that are medium-sized, firm, and slightly brownish-yellow.
  • No signs of mold.

How to Make Vegetarian Pies

  • Prepare the Ingredients

    Prepare the ingredients as follows:

    • Yam: peel and cut into small cubes.
    • Wood ear mushrooms: soak in water to expand, then slice or dice.
    • Shiitake mushrooms: soak in water to expand and cut into cubes.
    • Vegetarian fish: soak in water to expand, squeeze out excess water, and cut into cubes.
    • Green onions: wash and chop finely.

  • Mix the Dough

    First, put all the prepared flour into a large bowl (set aside about 2 teaspoons of flour for rolling the dough). Then add 1/3 teaspoon of salt and 2 teaspoons of vegetable margarine, and mix well.

    Next, add 100ml of water and knead the dough until it is elastic and smooth.

    Tip:

    • You can substitute vegetable margarine with peanut butter.
    • If you want the pie to have a nice yellow color, you should add a little turmeric powder.
    • Add 1 tablespoon of cooking oil to make the dough soft, smooth, chewy, and not sticky to your hands.
    • If you want the pie to be fragrant, use fresh unsweetened milk instead of water, and there’s no need to use additional vegetable margarine to avoid excess fat.

  • Sauté the filling

    Sauté the green onions in oil until fragrant, then add all the diced ingredients like taro, shiitake mushrooms, wood ear mushrooms, and vegetarian fish, and stir-fry evenly. Then season and continue to stir until just cooked, then turn off the heat.

    Tip: You can add vegetarian sausage, chicken leg mushrooms, oyster mushrooms, carrots, peas,… any ingredients you like, but make sure to dice them before sautéing the filling.

  • Wrap the dumplings

    First, take a small piece of dough and roll it out thinly. Then, use any round object to press onto the dough to form a circular shape before wrapping the dumplings.

    Scoop the filling into the center of the dough just enough, then fold it in half and pinch the edges to prevent the filling from spilling out.

    Wait for the oil to be slightly hot (not too boiling), then add the spring rolls to fry on low heat. Turn both sides of the rolls until they are golden brown, then remove them to drain the oil.
