Prepare the fish
When buying fish, cut off the gills and fins, scrape off the scales, gut it, and rinse several times with clean water.
Cut the fish into bite-sized pieces about 2 – 3 fingers long.
To clean the fish slime, add about 1 tablespoon of salt to a basin and rub it all over the fish. Then, rinse thoroughly with water several times to remove the slime and blood.
After preparation, marinate the fish with 1 teaspoon of salt, 1 teaspoon of seasoning, 1 teaspoon of monosodium glutamate, and 2 minced garlic cloves sautéed until fragrant, then mix evenly.

Prepare other ingredients
Wash the tomatoes and chop them finely. Wash the rice paddy herb and cilantro, then chop them finely. Clean the straw mushrooms and enoki mushrooms, cut off the stems, and if the straw mushrooms are too large, cut them in half.
Peel the shallots and the remaining garlic, then mince them. Wash the lemongrass, smash it, and cut it into sections. For the herbs to be served with, remove the old stems, wash them thoroughly, and let them drain.
Use a spoon to scrape or peel the pineapple, then chop it finely.
Quick and simple way to peel pineapple
- First, cut the pineapple lengthwise into 4 equal parts.
- Continue to slice along the length of each pineapple piece, stopping at the end and cutting firmly to separate the flesh from the skin.

Cook the hot pot
Place a pot on the stove, turn on medium heat, and add 2 tablespoons of cooking oil. Wait for the oil to heat up, then sauté the shallots, garlic, and lemongrass until fragrant.
Next, add tomatoes, pineapple, and 2 liters of water to the pot and bring to a boil. Once boiling, add the fish and bring the water back to a boil.
Season the hot pot broth with 1 packet of Thai hot pot seasoning, 2 tablespoons of sugar, 1/2 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1/2 tablespoon of salt.
When the broth is boiling, cook for about 10 more minutes until the fish is cooked through, adjust the seasoning to taste, add 5 tablespoons of calamondin juice, and add more rice paddy herb and cilantro to complete.
