Grilled fish 1 fish (about 1.5 kg) Pineapple 1/2 fruit (pineapple) Tomato 4 fruits Straw mushroom 200 gr Enoki mushroom 150 gr Rice paddy herb a little Cilantro a little Lemongrass 4 stalks Shallots 2 bulbs Garlic 4 cloves Fresh vermicelli a little Accompanying vegetables a little (Water spinach/ water lily/ as desired) Thai hotpot seasoning 1 pack (5gr) Calamansi juice 5 tablespoons Cooking oil 2 tablespoons Fish sauce 1/2 tablespoon Common seasoning a little (Salt/ sugar/ seasoning powder)

  • Choose fish with clear eyes and scales that are tightly attached to the body.
  • The fish body should be shiny, bright in color, with red gills; when placed in water, the fish should sink, and the flesh should have good elasticity.
  • Avoid buying fish that feel slimy when touched, have an unpleasant odor, dark or pale flesh, as these are fish that have been dead for a while and may be spoiled.

How to choose fresh and delicious pineapple

  • Choose pineapples that are bright yellow from the crown to the tail; a few eyes may be slightly green, indicating that they are ripe and will be sweet and tasty.
  • Opt for round, short-shaped pineapples as they will have more flesh compared to long-shaped ones.
  • Choose pineapples with large, sparse eyes, as this indicates that the pineapple is mature and ripened naturally, not soaked in chemicals.
  • You can try sniffing the end of the fruit; if it has a fragrant smell, it’s advisable to buy it. Additionally, avoid those with a slightly sour smell like fermentation, as that indicates the pineapple is overripe.
  • The greener the crown of the pineapple, the fresher it is. Overripe pineapples will have dry or brownish crowns.

How to prepare Fish Hot Pot

  • Prepare the fish

    When buying fish, cut off the gills and fins, scrape off the scales, gut it, and rinse several times with clean water.

    Cut the fish into bite-sized pieces about 2 – 3 fingers long.

    To clean the fish slime, add about 1 tablespoon of salt to a basin and rub it all over the fish. Then, rinse thoroughly with water several times to remove the slime and blood.

    After preparation, marinate the fish with 1 teaspoon of salt, 1 teaspoon of seasoning, 1 teaspoon of monosodium glutamate, and 2 minced garlic cloves sautéed until fragrant, then mix evenly.

    How to eliminate the fishy smell of fish:
    • Method 1: You can rub the fish with lime, vinegar, crushed ginger, or alcohol, or soak it in water mixed with any of these for about 10 – 15 minutes.
    • Method 2: Soaking the fish in rice water or diluted salt water can also effectively eliminate the fishy smell.
    • Method 3: Soaking the fish in fresh milk is also one of the quick methods to remove the fishy smell.

  • Prepare other ingredients

    Wash the tomatoes and chop them finely. Wash the rice paddy herb and cilantro, then chop them finely. Clean the straw mushrooms and enoki mushrooms, cut off the stems, and if the straw mushrooms are too large, cut them in half.

    Peel the shallots and the remaining garlic, then mince them. Wash the lemongrass, smash it, and cut it into sections. For the herbs to be served with, remove the old stems, wash them thoroughly, and let them drain.

    Use a spoon to scrape or peel the pineapple, then chop it finely.

    Quick and simple way to peel pineapple

    • First, cut the pineapple lengthwise into 4 equal parts.
    • Continue to slice along the length of each pineapple piece, stopping at the end and cutting firmly to separate the flesh from the skin.
    • Avoid cutting too close to the skin to prevent leaving any eyes on the pineapple. Finally, cut it into small pieces as needed.

  • Cook the hot pot

    Place a pot on the stove, turn on medium heat, and add 2 tablespoons of cooking oil. Wait for the oil to heat up, then sauté the shallots, garlic, and lemongrass until fragrant.

    Next, add tomatoes, pineapple, and 2 liters of water to the pot and bring to a boil. Once boiling, add the fish and bring the water back to a boil.

    Season the hot pot broth with 1 packet of Thai hot pot seasoning, 2 tablespoons of sugar, 1/2 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1/2 tablespoon of salt.

    When the broth is boiling, cook for about 10 more minutes until the fish is cooked through, adjust the seasoning to taste, add 5 tablespoons of calamondin juice, and add more rice paddy herb and cilantro to complete.

    This spicy and sour fish hot pot can be served with fresh noodles, enoki mushrooms, water mimosa, water spinach, … according to your preference.
