  • Choose fresh, lively carp that are still moving.
  • It is advisable to buy large, long carp with a proportionate head and body, weighing about 2 – 4kg, because fish under 1kg often have many bones and less meat.
  • It is best to buy fish around the beginning of the 4th lunar month as this is the best season for carp.
  • Do not choose fish that are not active or swim weakly as they are usually not fresh and nearing death.
  • You can use black carp, crispy carp, or grass carp for cooking as they are all suitable.

  • Prepare the Carp

    After buying, clean the fins, scales, remove the entrails and gills. Then, rinse the fish several times with clean water and cut into pieces about 1 finger thick for easy eating.

    How to eliminate the fishy smell of carp

    • After preparation, soak the fish in a little diluted white wine for about 5 minutes, then rinse with water.
    • If you want to remove the fishy smell with ginger, just slice the ginger thinly and soak the fish and ginger in water for about 5 minutes.
    • Soaking with unsweetened milk for about 5 minutes and then rinsing with water can also reduce the fishy smell of the carp.

    Dill and green onions should have the roots removed, washed clean, and cut into pieces.

  • Marinate the carp

    Grind turmeric and mix it evenly with 1 tablespoon of fermented soybeans, then add the prepared carp.

    Add a little dill, then mix the spice mixture with the carp evenly and marinate for about 15 – 20 minutes for the carp to absorb the spices.

    Add tomatoes to the pot along with 1 tablespoon of fermented rice, add about 1 – 1.5 liters of filtered water, cover, and cook on high heat until the hotpot broth boils.

    Then, add the marinated fish to cook with the hotpot broth for about 10 minutes, when the fish is cooked, add a little herbs to dip in the hotpot to eat with.

    Tip:

    • To make the hotpot broth more flavorful, you can use coconut water instead of filtered water.
    • Depending on your family’s taste, you can adjust the spices to your liking.
