Ingredients for Turkish Flatbread Serves 4

What is all-purpose flour?
- All-purpose flour is a type of ingredient commonly used to make a variety of baked goods, depending on the type of cake, the amount of flour needed varies or can be combined with other types of flour if necessary.
- All-purpose flour is made from two types: soft winter wheat and hard spring wheat, with a protein content ranging from 10 – 12%.
- In addition, all-purpose flour can be bleached or unbleached, but usually, bleached flour is used for making bread and pastries.
What is cilantro?
- Our cilantro, fragrant coriander or also known as ngò rÃ, belongs to the Apiaceae family, originating from countries in the Southwestern Asia region extending westward to Africa.
- Our cilantro is an annual herbaceous plant, growing up to 50cm tall. The leaves have a variable shape, slender and broadly lobed at the base of the stem. The flowers are white or pale pink, asymmetrically growing with petals facing outward resembling an umbrella. The cilantro fruit is spherical, quite small with a diameter of about 3 – 5mm.
- In addition to enhancing the flavor of dishes, cilantro is also well-known for its effects in helping to reduce blood sugar levels, boosting immunity, and enhancing cardiovascular health.
How to make Turkish flatbread

Activate the yeast with warm milk
Prepare a large bowl, and add the following mixture of ingredients: 70ml of unsweetened warm milk at about 40 degrees, 70ml of warm water at about 40 degrees, and 1 teaspoon of dry yeast.
Mix well to activate the yeast; do not add sugar or salt at the same time as the yeast. This will reduce fermentation ability.
Tip: If you do not have a thermometer, you can try to feel the temperature with your fingertips; if it feels slightly warm, it’s fine. Avoid too high temperatures as it will weaken the yeast or cause yeast death, leading to poor or no rising of the bread. -
Mix the dough
Add 200g of flour, 1/2 teaspoon of salt, and 1 teaspoon of sugar into a bowl, and knead. You fold your fingers in, pulling the dough from the edge into the center of the mass and pressing the dough out with your palm.
Add 7ml of olive oil and knead until the dough absorbs it evenly and becomes soft and smooth. Brush oil over the surface of the dough, cover tightly with plastic wrap, and let it rise for about 1 hour until the dough doubles in size.

Shape the bread
After 1 hour, the dough has doubled in size, at that time you take the dough out and divide it into 6 or 8 pieces. For each small dough ball, add some flour to the surface and knead.
You fold the dough inside and then press it out with your palm to release some air in the dough. Take 1 piece of dough, sprinkle a little flour on it and roll it out into a round piece about 0.5cm thick.

Grill the bread in a pan
Heat a pan, place the bread in and grill on medium heat until the bread puffs up, then flip it over while reducing the heat. Grill the bread until both sides are golden brown.
Chop fresh cilantro finely, add a little salt, and mix with 3ml of olive oil to brush evenly on both sides of the bread to complete.

Turkish flatbread is fluffy and very soft, not complicated in ingredients or kneading methods, easy to make at home for kids.
