How to Make Green Tea Bread

Mix the Ingredients
First, heat 160ml of unsweetened fresh milk until warm at 40 degrees Celsius. Then, add 4g of yeast to the milk, stir well, and let it sit for 5 – 10 minutes for the yeast to activate, swelling into a mass like a crab brick.
Tip:
- For instant yeast, you can skip the activation step with warm water and mix it with water at room temperature. However, if you want to ensure that the yeast is still active, it is advisable to perform this step.
- Additionally, the water temperature for activating the yeast must be between 32 – 40 degrees Celsius, not higher, as it will kill the yeast or weaken its activity.
In a new bowl, add 250g of sifted flour, 2g of salt, and 5g of sugar and mix well. Next, evenly stir 4g of green tea powder with 5ml of lemon juice.
Then, pour the activated yeast mixture, green tea mixture, and 20ml of cooking oil into the dry flour. Mix until the mixture is sticky and forms a mass.

Dough fermentation and shaping
Place the dough on the table and use your hands to knead the dough using the Folding and Stretching technique.
First, fold the dough, then use the palm of your hand to press and stretch the dough away. Note that you should press and stretch the dough away, not press down. Next, rotate the block of dough 90 degrees and repeat the two steps for 15 – 20 minutes until the dough is smooth and elastic and does not stick to your hands.
How to recognize when the dough is ready:
- The dough is smooth and has good elasticity.
- The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick to your hands.
- You can stretch the dough into a thin sheet without tearing.
- Check the dough with the Windowpane test: tear off a piece of dough and stretch it out. If the dough forms a thin membrane that is not easily torn and light can pass through, it is ready.
After kneading, place the dough in a bowl, cover it tightly with plastic wrap, and let it rise for 45 – 60 minutes until it doubles in size.
After the first fermentation, knead it lightly to release all the air bubbles, then divide it into 5 equal parts and shape them into balls. Next, roll each ball into a thin oval shape, and use a knife to make a cut down the middle of the dough, and it is complete.
Finally, cover the shaped dough with a cloth and let it rise for the second time for about 30 minutes until it doubles in size.
Tip: Depending on the weather and room temperature, the fermentation time may vary. If the weather is hot, the dough will rise faster and vice versa. If the weather is cold like in winter, you can preheat the oven (or air fryer) to 30 – 35 degrees Celsius, then turn it off and place the dough inside to rise. -
Baking the bread
Preheat the air fryer at 180 degrees Celsius for 5 minutes.
Pour 1 cup of warm water into the bottom of the baking tray, place the bread inside, then cover the surface with aluminum foil, and bake for the first time at 160 degrees Celsius for 20 minutes.
After that, remove the aluminum foil and bake for a second time at 160 degrees for 3 minutes to finish.
