How to choose good eel
- You should prioritize buying river eel with distinctly two-colored skin.
- Choose those of moderate size, avoid buying very small eels because the meat won’t be tasty, and also avoid buying very large eels because they are likely farmed, and the meat will be mushy and not delicious.
- Limit buying farmed eels with black skin because wild eels have firmer, more fragrant, and tastier meat.

Prepare eel and fresh turmeric
After purchasing the eel, you need to thoroughly clean the slime on its body before processing by placing a little warm water into a basin and soaking the eel for about 15 minutes. The slime will easily disappear.
Once you have cleaned the eel, you cut open the belly and remove all the intestines, then rinse the eel with salt water until it is thoroughly clean.
Next, you cut the eel into bite-sized pieces and place them into a bowl to marinate.
Effective ways to clean eel slime
- Method 1: Place the eel in a plastic bag with a little coarse salt. Seal the bag tightly and shake it vigorously, then rub the eel’s body with your hands for about 2 minutes to remove all the slime.
- Method 2: Use kitchen ash to rub over the eel’s body, then wipe off the slime and rinse with water.
- Method 3: Put the live eel in a plastic bag and place it in the freezer. After 2 hours, take it out, soak it in water, wipe off the slime from the eel’s body, and rinse with water.

Cook eel with turmeric
First, you put a pan on the stove and then add cooking oil. When the oil is hot, add the remaining shallots and garlic to fry until fragrant.
Next, add the marinated eel and stir well. Add 1 teaspoon of seasoning. Stir-fry for about 1 minute, then pour in the sliced turmeric to stir-fry together with the eel.
When the eel and turmeric are fragrant and cooked evenly, add 1/2 ccup of water and cover the pot to let the eel absorb the flavor evenly.
Continue to cook until the water thickens and nearly evaporates, then turn off the heat.
