What is Gelatin?

Making Caramel
Place a pot on the stove, add 60gr of sugar and 30ml of water, then cook over medium heat until the sugar melts and turns a brown color.
Next, pour the caramel mixture into a mold and let it cool.
Note: During the caramel cooking process, you must not stir the sugar water to avoid crystallization. -
Heat the milk mixture
First, soak 50g of gelatin powder in about 30ml of cold water for 15 minutes.
Then, place a new pot on the stove, add 1.5 liters of unsweetened fresh milk, 50g of gelatin powder, and stir over medium heat until the gelatin dissolves and the mixture is warm, then turn off the heat.
Tip: Fresh milk should not be boiled, just warmed. Because boiling milk will react to create a separation phenomenon, causing the milk to lose its nutrients and making curdling more likely. -
Mix the egg and milk mixture
Put 16 egg yolks, 300g of sugar, 10ml of vanilla, and a little warm fresh milk into a bowl and mix well to combine.
Next, pour the egg mixture back into the pot of fresh milk and continue to stir until the sugar dissolves.

Pour into mold
Cover a fine cloth over the strainer, then pour the egg milk mixture into the cake mold through the strainer to remove any residue.
Finally, seal the cake mold tightly and place it in the refrigerator for 8 hours before serving.
