Ingredients for Braised Salmon with Pepper For 4 people

Salmon fillet 500 gr Green onions 2 stalks Shallots 1 bulb Garlic 3 cloves Chili 1 piece Caramel sauce 1 tablespoon Cooking oil 5 tablespoons Fish sauce 2 tablespoons Common spices a little (Salt/ sugar/ seasoning powder/ pepper)

How to choose fresh and delicious salmon

  • Fresh salmon will have bright pink or orange flesh, dry and not slimy. Additionally, the fish’s marbling should be evenly colored and bright.
  • When touched, it feels firm with good elasticity. If pressed, it should leave a dent but immediately return to its original state, indicating that the salmon is still fresh.
  • Moreover, choose fish that has a natural fishy smell, without any strong or foul odors.
  • Avoid fish that has dark colors, dull appearances, and tiny brown spots on the surface, as this indicates that the fish has started to spoil and is no longer usable.

How to make Braised Salmon with Pepper

  • Prepare and marinate the salmon

    Fillet the salmon, wash it clean, let it drain, and then cut it into bite-sized pieces about 2 finger lengths.

    Marinate the fish with 1/2 teaspoon of salt, 1/2 teaspoon of pepper, mix well, and let it marinate for 15 minutes for the fish to absorb the seasoning.

    Tip: To ensure the dish remains intact when finished, do not cut the fish too small during preparation.

    Effective ways to eliminate the fishy smell of salmon

    • Method 1: Soak the salmon in white wine and minced ginger for 7 – 10 minutes.
    • Method 2: Another common method to effectively eliminate the smell is to soak the fish in milk for about 10 minutes.
    • Method 3: You can also use a mixture of diluted lemon juice and salt, soaking the salmon for 30 – 60 seconds to instantly remove the fishy smell.

    Trim the green onions, removing the tough roots, wash them clean, let them dry, and cut into bite-sized pieces about 1/2 finger length.

    Peel the garlic and shallots, then chop finely. Wash the chili and slice it.

  • Fry the salmon

    Place a skillet on the stove over medium heat, add 3 tablespoons of cooking oil, wait for the oil to heat up, then add the salmon and fry until golden brown on both sides, then remove and let drain.

  • Fish Stew

    Place a clay pot on the stove over medium heat, add 2 tablespoons of cooking oil, and wait for the oil to heat up before adding garlic, shallots, and chili to sauté until fragrant.

    Once the garlic and shallots are fragrant, add green onions and the fried salmon, then add 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1 tablespoon of seasoning powder, and 1 tablespoon of color sauce, stirring evenly so that the fish absorbs the seasoning.

    Next, add 1 cup of water until it just covers the fish, wait for the water to boil, then reduce the heat and stew for 20 minutes until the sauce thickens.

    Taste and adjust the seasoning, adding 1/2 teaspoon of pepper, then turn off the heat.
