How to Make Steamed Clams with Lemongrass

  • Prepare the Ingredients

    To clean the clams of sand, when you buy them, soak the clams in diluted salt water with 2 fresh chilies, then rinse with clean water and drain.

    Clean the lemongrass, smash it and cut it into pieces. Wash the remaining two chilies and cut them into small pieces.

    Put all the prepared clams and lemongrass into an pot along with 300ml of water and 1/2 teaspoon of salt.

    Boil for about 10 minutes over high heat until you see the clams open up and release a fragrant aroma, then turn off the stove, add fresh chili for extra appeal, and you can enjoy it right away.

2-corner clams 1 kg (2-corner clams) Lemongrass 10 stalks Ginger 1 piece Chili 3 pieces Common spices a little (Salt/ sugar/ monosodium glutamate)

How to prepare Steamed Clams with Lemongrass (2-corner clams)

  • Prepare the ingredients

    First, with 1kg of 2-corner clams, soak them in diluted saltwater for about 1 – 2 hours. Once the clams have released all the sand, rinse them 1 – 2 times with clean water and let them drain.

    Wash the lemongrass, drain, cut into pieces, and crush. Peel the ginger, then use a knife to crush and chop it finely. Finally, for the chili, just cut it thinly on a diagonal.

    Once the ingredients are prepared, take a pot and add 1/2 of the smashed lemongrass first, then add the 2-cup clams, and sprinkle the remaining lemongrass, ginger, 1/2 of the chili, 150ml of water, 1 teaspoon of salt, 1/2 teaspoon of sugar, and 1/2 teaspoon of monosodium glutamate on top.

    Next, cover the pot and place it on the stove, and cook over medium heat for about 10 – 15 minutes.

    When you see the water boiling and the 2-cup clams opening, use chopsticks to gently stir, sprinkle the remaining chili, then turn off the heat and serve in a bowl to enjoy!

How to choose fresh clams

  • Live clams usually have two tightly closed shells; you should choose those with hard, firm shells that are difficult to open by hand as they are very fresh.
  • For clams that are slightly open, touch them with your hand; if they close their shells or move, then they are still fresh.
  • Do not choose clams with broken shells or easily separable shells, and those that are open but do not move when touched.
