How to choose fresh and delicious okra
- When buying okra, you should choose those with a beautiful green color, with many fine hairs on the outer skin and no dark spots on the body of the okra.
- Additionally, when buying, you should choose okra that is of moderate size, not too big or too small. Ideally, it should fit in the palm of your hand. Because large and long okra is usually old and fibrous, making it less tasty.
- Do not buy okra that is bruised, feels soft when picked up, leaks water, or has lost all the fine hairs sticking to the skin. Such fruits are often spoiled and have been harvested for a long time, so they lack nutrients.

How to prepare steamed okra with soy sauce

Prepare the ingredients
Wash the okra you bought, place it in a basket to drain, then use a knife to cut off the top and place it on a plate.
Peel and finely chop the shallots and garlic.
Pick off any wilted leaves from the scallions (if any), then wash them clean and chop them finely. Remove the stems from the chili peppers and chop them small.
Next, place a pot on the stove, add about 200ml of water, place the steamer into the pot, then put the plate of cut okra on top, cover the lid, and steam over medium heat for about 5 minutes until the okra is cooked, then turn off the heat.
Finally, take the plate of cooked okra out, let it cool slightly, and then use a knife to cut it in half lengthwise.
Tip: To avoid overcooking the okra, making it soft and unappetizing, you should steam the okra for about 5 minutes. -
Make scallion oil and sauce
To make scallion oil, heat a pan on the stove, then add about 2 tablespoons of cooking oil and heat it over medium heat until hot. Turn off the heat, pour the hot oil into a bowl containing chopped scallions and chili, and mix well.
For the sauce, also heat a pan on the stove, add 3 tablespoons of cooking oil and minced garlic and onion, then sauté over medium heat for about 1 minute until fragrant. Add the seasonings: 1 tablespoon of sugar, 1 teaspoon of MSG, 1/2 tablespoon of oyster sauce, 1 tablespoon of soy sauce, and 1 tablespoon of chili sauce.
Lower the heat and stir until the seasonings are well mixed, then simply adjust the seasoning to taste, turn off the heat, and pour the sauce into a bowl.
Drizzle the sauce over the okra, then steam for an additional 1 minute for the flavors to meld, then serve on a plate and pour the scallion oil on top to finish.
