  • You should choose those pods that are light green and have a nice sheen. If you touch the surface of the okra pod, you will feel fine, soft hairs.
  • Additionally, when you gently squeeze a young okra pod, it should feel soft, and you should not see the seeds bulging out.
  • You should choose pods that are small or medium in size because long pods are older and will have fibers that are not tasty.

How to choose fresh and delicious young corn

  • You should choose ears that have evenly spaced kernels, with a size about the length of one finger; these will taste sweeter than those that are too large.
  • The corn should be bright yellow or white, not too dark, and the stalk should be straight, not bent. When holding the corn, it should feel firm, not soft.
  • Avoid choosing ears of corn that are scarred, have unusual white spots on the stalk, or signs of insect damage. Do not buy corn that is dry or rotten.

  • You should choose mushroom stems that are vibrant in color and 12 – 15 cm long. If the mushrooms are too long, they may be hollow inside and not taste good when eaten.
  • The mushroom cap should be round, brown, glossy, with no scratches or tears, and no dark spots or wrinkles. Fresh chicken leg mushrooms will have a thin layer of fuzz on top of the cap.
  • The stems should be white, looking and feeling very firm, with uniform color. When fresh, chicken leg mushrooms have a very distinctive aroma similar to almonds. Avoid mushrooms that have an unpleasant odor or are bruised.

  • Prepare the ingredients

    Trim the ends off the okra and wash it thoroughly. If the okra you bought is a bit long, you can cut it in half for easier eating.

    Wash the young corn and cut off the ends. Clean the chicken leg mushrooms and slice them into bite-sized pieces.

  • Cook the seasoning mixture

    You place a pot on the stove and add about 50 ml of filtered water into the pot, then add the seasoning mixture consisting of: 3 tablespoons of fish sauce, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, and 1/2 tablespoon of coloring sauce. Cook the seasoning mixture over high heat for about 5 minutes until it boils.

    When the mixture boils, add 1/2 of the ground lemongrass and 1 teaspoon of ground chili, then stir well.

  • Make braised okra

    Next, you will add the chicken thigh mushrooms first, braising for about 2 minutes over medium heat. Then, add the young corn and braise for about 2 minutes before adding 2 tablespoons of cooking oil to the pot.

    Next, add 2 tablespoons of coconut milk to the pot, continuing to braise over medium heat for about 3 minutes to let the water reduce. Finally, add the okra and braise for another 2 minutes before turning off the heat.

  • Completion

    After completing, you can serve everything in a clay pot, then sprinkle some ground lemongrass on top for added fragrance.
