Chicken thigh mushrooms 1 piece Fresh shiitake mushrooms 1 piece Sweet corn A bit (1 small slice) Carrot 1/3 piece Green beans 5 pieces (also known as ‘cove beans’) Onion 1/6 piece Wonton wrappers 1 piece Cooking oil 3.5 tablespoons Plum chili sauce 1.5 tablespoons Chili sauce 1 tablespoon Soy sauce 1 tablespoon Vegetarian seasoning 2 teaspoons Sugar 1 teaspoon

How to choose fresh and delicious chicken leg mushrooms

  • Choose chicken leg mushrooms that have bright colors, with mushrooms that are of uniform size and about the size of two fingers, as these are the most delicious and just right to eat.
  • Fresh and delicious chicken leg mushrooms will have intact caps, not bruised or leaking moisture, and normal chicken leg mushrooms will be carefully packaged.
  • Avoid choosing chicken leg mushrooms that are too large or longer than about 15cm as they are often older mushrooms, hollow inside, which will lose their flavor when cooked.

How to make steamed vegetarian wontons

  • Prepare the ingredients

    Peel the onion, peel the carrot, strip the edges of the green beans, and cut off the dirty ends of the chicken leg mushrooms and shiitake mushrooms.

    Wash all the above ingredients with a slice of American corn, then drain.

    Dice the onion, carrot, mushrooms, green beans, and finely grate the corn, keeping each ingredient separate.

  • Stir-fry filling

    Put 2 tablespoons of cooking oil into the pan, heat the oil, then add diced onion and stir-fry over medium heat for about 2 minutes until the onion is fragrant.

    Next, add chicken thigh mushrooms, shiitake mushrooms, green beans, and carrots. Stir all the ingredients evenly and season with 1 teaspoon of vegetarian seasoning. Stir for another 2 minutes over medium heat until the vegetables are slightly cooked and turn off the heat.

    Transfer the filling to a bowl, setting aside about 1 tablespoon of filling to make the sauce later!

  • Wrap the dumplings

    Take 1.5 teaspoons of filling and place it in the center of the dumpling wrapper, then wrap it up, shaping it as you like.

    Repeat the process until all the ingredients are used up.

    Evenly brush 1/2 tablespoon of cooking oil onto a plate or steamer, then arrange the dumplings on top.

    Place in the steamer, cover, and steam over medium heat for about 3 – 5 minutes. When the dumpling skins become translucent, the dumplings are cooked.

  • Prepare the sauce

    Add 1 tablespoon of oil to a pan, heat the oil, then add the dumpling filling, 1.5 tablespoons of chili sauce, 1 tablespoon of chili sauce, 1 tablespoon of soy sauce, 1 teaspoon of seasoning powder, and 1 teaspoon of sugar.

    Bring the mixture to a boil over low heat, stirring continuously to blend the flavors. When the sauce boils for about 2 minutes, taste and adjust the seasonings to your preference, then turn off the heat.

How to Make Steamed Vegetarian Wontons with Spicy Sauce

  • Prepare the Ingredients

    Soak the wood ear mushrooms in water for 45 – 60 minutes until they are soft. Then drain the water and chop the wood ear mushrooms finely.

    Soak the shiitake mushrooms in warm water for about 15 – 20 minutes until they are soft. Then take them out, rinse thoroughly, and squeeze out the water. Chop the shiitake mushrooms finely.

    Wash the enoki mushrooms with water and then chop them finely.

    Wash the cabbage with diluted salt water, rinse with clean water, and let it drain. Then, use a knife to cut the cabbage into small dice.

    After buying, wash the spring onion and chives thoroughly and chop them finely. Wash the carrot and cut it into small dice.

    You place a pan on the stove, add a little cooking oil and 1/2 tablespoon of chopped spring onion into the pan and sauté until fragrant.

    First, you spread a thin layer of oil on the edges of the wrapper.

    Next, place a sufficient amount of filling in the center of the wonton wrapper. Then, you fold the wrapper into a triangle shape and brush one corner of the triangle you just formed.

    You place a pot with about 1 – 1.5 liters of water on the stove. Wait for the water to boil, then add 1 tablespoon of cooking oil to the pot. Next, add the wontons to the pot, boil on low heat for about 3 minutes, then remove them to a plate.
