Ingredients for Vegetarian Wontons For 2 people

How to choose ingredients
Fresh snow fungus:
- It should be translucent white like jelly, not bruised, and have the characteristic aroma of snow fungus.
- When soaked in water to expand, it should feel sticky and elastic when touched.
Dry snow fungus
- It should be light yellow, with no white mold spots.
- Choose a firm type, not broken or crumbled.
White tofu
- It is advisable to choose tofu that is off-white; do not select tofu that is yellow or has a yellowish hue as those pieces may contain gypsum.
- When holding a piece of tofu, it should feel light, and it should feel soft when touched.
- A pure tofu piece will have a pleasant smell, while a gypsum-containing tofu will smell of lime or have no smell at all.
Note: If you don’t have choy sum leaves, you can substitute them with bok choy or sweet cabbage, which will still taste great.
How to prepare vegetarian wontons

Prepare the ingredients
Wash the carrot thoroughly, peel it, and dice it into small cubes of about 40g. The remaining carrot should be sliced about 2cm thick.
Soak the snow fungus in water for about 15 – 20 minutes to expand, rinse it well with clean water, drain it, and then use a knife to remove the base. After that, chop it finely.
Remove the kernels from the corn and place them in a bowl.
Wash the choy sum leaves well and chop them finely.

Stir-frying the filling
Place a pan on the stove, add a bit of cooking oil, wait for the oil to heat up, then add chopped shallots and green onions to sauté until fragrant.
Gradually add carrots, snow mushrooms, and mustard greens, stir-frying until soft, then add tofu, mash the tofu, and continue to stir-fry for about 4 – 5 minutes before seasoning.
Add to the pan 1/2 teaspoon of salt, 1 teaspoon of vegetarian seasoning, 1 teaspoon of pepper, 1 teaspoon of sugar, and stir well for the seasoning to soak into the vegetables until the mixture dries out, then turn off the stove.
Tip: mashing the tofu will make the filling for the wontons richer.

Wrapping the wontons
Prepare a basin of water to soak the rice paper with a ratio of 1:1, which is 150ml of hot water and 150ml of cold water.
Fold the rice paper in half, then gently dip it into the basin of water to soften the rice paper. Place the filling on top of the rice paper and fold the corners into a triangle, then fold the two ends together so the filling doesn’t burst out while cooking.

Cooking the broth
Add coconut water into the pot, then gradually add the corn kernels and sliced carrots. Place the pot on the stove, set to medium heat, and cook until the water in the pot boils and all ingredients are cooked. Then, season the broth to make it more flavorful. Finally, add the green onions to the pot and turn off the heat.

Final product
The broth made from coconut water and vegetables is clear, with a light sweetness and rich flavor. The dumplings have a chewy exterior and a crispy interior, providing a unique taste experience. You can dip the dumplings in soy sauce for added flavor.
