How to Prepare Stir-Fried Vermicelli with Eel

  • Prepare the eel

    To remove the slime from the eel, when you buy it, clean it using a bit of salt, a lemon, and rub it with the eel.

    Next, boil the eel for about 10 minutes on high heat, then take it out and cut it into small pieces about 2 finger lengths long.

    Put the eel in a bowl and marinate it with a mixture of spices including: 1 spoon of turmeric powder, 1 tablespoon of salt, 1 teaspoon of seasoning powder and let it sit for about 20 minutes for the eel to absorb the spices.

  • Prepare the other ingredients

    Peel the onion, rinse briefly with water, then cut into wedges. Peel the carrot, rinse with water, then cut into thin strips about the length of 1 finger. Pick the leaves of the Vietnamese coriander, rinse well, and let them drain.

    Remove the stems from the wood ear mushrooms and shiitake mushrooms, then soak the mushrooms in water for about 20 minutes, then rinse them well with cold water, let them drain, and slice them thinly.

    Soak the vermicelli in boiling water for about 10 minutes, then take it out and let it drain, using scissors to cut the vermicelli into pieces about longer than 1 finger.

    Then marinate the vermicelli with 1 tablespoon of oyster sauce, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, and let it sit for about 20 minutes for the vermicelli to absorb the spices.

  • Stir-fried vermicelli with eel

    First, place a pan on the stove with 2 tablespoons of cooking oil. Once the oil is hot, add carrots, onions, wood ear mushrooms, and shiitake mushrooms and stir-fry for about 3 minutes on high heat, then transfer to a plate.

    In the same pan, add 1 tablespoon of cooking oil and the minced garlic, sauté until fragrant, then add the eel and stir-fry on high heat for about 5 minutes, then transfer the eel to a plate.

    Next, add the vermicelli to the pan, season with 2 teaspoons of salt, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, and stir well to absorb the seasoning.

    Then add the carrots, onions, wood ear mushrooms, and shiitake mushrooms that were stir-fried with the eel into the pan, and continue to stir-fry for about 3 minutes on high heat.

    Finally, add the chopped green onions and cilantro to the pan, stir briefly, then taste and adjust the seasoning to your liking, turn off the heat, and serve the stir-fried vermicelli with eel on a plate to finish.
