  • To buy fresh and delicious pork, you should choose pieces that are bright in color, with a pink or light red hue, and the fat should be translucent white with a slight ivory tint.
  • You can press your finger into the piece of meat; if it bounces back well and there are no indentations left on the surface, then this is fresh meat.
  • For pork belly, you should buy pieces where the fat and meat are tightly attached to each other, with a maximum fat layer of about 2cm, as this indicates that the pig was not raised for rapid weight gain.

How to prepare Stir-Fried Noodles with Pork

  • Prepare the ingredients

    After purchasing the pork, wash it under running water to clean off any dirt and blood remaining on the meat.

    To eliminate the odor of the meat, rub salt around the piece of pork and then rinse it with clean water, allowing it to drain. After that, slice the pork into thin pieces suitable for eating.

    For garlic, peel it, rinse briefly with water to clean, and then chop finely. Remove the stem and seeds from the bell pepper, rinse it, and then cut it into small square pieces about the size of a finger joint.

    Next, soak 2 packs of noodles in warm water for about 5 – 7 minutes until the noodles soften. Then, take the noodles out into a basket, rinse with cold water to prevent sticking, and let them drain.

    Tips for preparing pork without odor
    • Method 1: The most common way to remove the odor of pork is to soak the meat in a diluted saltwater solution for about 10 – 15 minutes, then rinse it with clean water.
    • Method 2: You can also use other ingredients that help eliminate odors, such as white wine, vinegar, ginger, lemongrass, etc. Soak the pork with these ingredients for about 5 – 10 minutes and then rinse clean. This not only helps eliminate odors but also enhances the flavor of the dish.
