Prepare the pig kidney
After purchasing the pig kidney, place it in the freezer refrigerator for about 60 minutes to freeze it solid, then cut the pig kidney in half lengthwise and remove all the foul-smelling glands (the white part) inside.
Wash the kidney several times with water, then use a knife to cut it into bite-sized pieces. Next, rub the kidney with a mixture of a little white wine and a few slices of ginger to eliminate the fishy smell.
