- You should choose crabs that are intact, with full claws.
- Observe the skin between the joints on the crab’s claw; if this skin is pink or dark pink, the crab is meaty. Fresh crabs will have smooth, shiny skin, and the meat will be firm.
- You can gently squeeze the belly; if it feels firm, the crab is meaty. Squeeze the part of the leg under the shell; if you see the crab squirming, it is still healthy and the meat is good.
- Avoid buying crabs that are missing claws or moving slowly, as these crabs have been kept for many days and the meat will be mushy and not tasty.
- The beginning and end of the lunar month are suitable times to buy crabs; avoid purchasing in the middle of the month (lunar) because crabs are molting and not tasty.
Tips for choosing fresh and delicious minced pork
- You can buy it ready-made or grind it yourself with a meat grinder at home. To choose a good piece of meat, pay attention to the following points.
- Good pork has a dry membrane, bright red color, and a slightly firm surface. The cut surface of the meat is bright pink, with soft, pinkish skin.
- The fat part is bright in color, firm, and has a characteristic aroma.
- Avoid choosing spoiled meat that has a pale color, feels slimy to touch, has dark-colored fat, or shows signs of crumbling or disintegration.
How to choose fresh and delicious shrimp
- Fresh shrimp have a slightly curved body, firm flesh, they may not be large, and the flesh will not be unusually thick.
- You should choose shrimp with flexible, intact shells. The head and legs must be tightly attached to the body.
- The shell of fresh shrimp must be shiny, smooth, and the area between the shrimp’s body should be clear.
- Do not buy shrimp that have turned black in the legs as this is a sign that they have spoiled.

How to prepare Fried Stuffed Crab Shells

Prepare the ingredients
After purchasing the crab, you need to remove all the strings around it, clean the crab thoroughly, paying special attention to the sides where algae tend to stick the most.
Next, place the crab in a pot of boiling water. When the water boils for about 5 minutes, take the crab out to preserve its sweetness and firm meat.
After the crab is cooked, proceed to separate the crab to extract the meat and roe, while keeping the crab shell intact.
Shrimp should be washed, heads and shells removed, then separate the shrimp meat, removing the intestinal cord. Next, finely chop the shrimp.
Peel and wash the garlic. Clean and finely chop the cilantro.

Marinate the meat and stuff the filling
Add 2 tablespoons of cilantro, 2 minced garlic cloves, and 1 teaspoon of pepper into a mortar and grind them well, then mix with 1 teaspoon of sugar, 2 tablespoons of flour, 1 tablespoon of oyster sauce, and 1 tablespoon of soy sauce.
Once the mixture is well combined, add the crab meat and roe, minced pork, 1 chicken egg, and 2 tablespoons of flour, mixing thoroughly to blend the ingredients together.
Next, stuff the meat into the crab shell.

Steam the crab
You place a steamer pot on the stove, add water, and bring it to a boil.
Then arrange the crab into the pot, steam it for 20 – 25 minutes until the stuffed crab meat is cooked, then take it out to cool.
Beat 1 chicken egg, then dip the steamed stuffed crab into the egg to coat it completely.

Fry the crab
You place a frying pan on the stove, add 5 tablespoons of cooking oil, and fry the crab in hot oil over medium heat until the stuffed crab meat turns a beautiful golden brown, then take it out to drain the oil.

Notes When Eating Crab
- You should not drink tea or eat persimmons to rinse your mouth after eating crab because the tannin content in tea will react with the protein in crab meat, creating precipitates that can cause kidney stones, affecting your health.
