How to choose fresh shrimp
- Choose shrimp that have a natural, uniform color, and do not have an unusual smell.
- The tail of the shrimp should be slightly curled, and feel firm to the touch. If the tail is curled and soft, these shrimp are spoiled, old, and you should not buy them.
- Avoid buying shrimp that have overly stretched backs, as these may have been treated with chemicals and are unsafe.
How to choose green papaya for salad
- You should choose long, heavy fruits with a sticky stem. These fruits will have fewer seeds and thicker flesh.
- If buying papaya for salad, choose freshly picked duck-bill papayas that are still firm. If the fruit has been picked for a while, the flesh will be soft, and when grated, the papaya will not be crunchy.
How to Make Shrimp and Papaya Salad

Roast Peanuts and Fry Onions
Place a pan on the stove, add peanuts along with 1 teaspoon of salt, stir evenly over medium heat. Roast until the peanut shells crack and are slightly burnt, then transfer the peanuts to a bowl. Once the roasted peanuts cool, shell them and crush them.
After peeling the shallots, slice them thinly, place them in a pan, and pour enough oil to cover the shallots. While frying the shallots, stir them every 3 – 4 minutes. Fry until the shallots are cooked and golden brown, then turn off the heat and remove the shallots from the oil.

Prepare the Ingredients
After purchasing shrimp, wash them with diluted salt water, gently squeeze with your hands and soak for about 5 minutes. Then rinse thoroughly with water and drain.
Crush the garlic, peel it, and chop finely. For the chili, take about 1/2 of a chili, chop it finely with the garlic, and for the remaining half, remove the seeds and cut into strips. Cut the lemon and squeeze out the juice.
Wash the papaya, peel it. Then, use a grater to shred it.

Stir-fry shrimp
Place a pan on the stove, add about 1 tablespoon of cooking oil to the pan. Next, add minced garlic and sauté until fragrant over medium heat.
When the garlic starts to smell good, add the shrimp and stir well to coat the shrimp with the garlic. Stir-fry until the shrimp are firm and change to a pinkish color.
Add 1 teaspoon of pepper, 1 teaspoon of seasoning powder, 1/4 teaspoon of monosodium glutamate, 1/4 teaspoon of salt, and 1/2 tablespoon of sugar to the pan with the shrimp, then mix well to absorb the seasonings.
Stir-fry the shrimp until the liquid in the pan reduces, and the shrimp turn golden, then turn off the heat. Scoop the shrimp into a bowl, drain the cooking oil, and let cool.

Mixing the salad dressing
To make the salad dressing, add 3 tablespoons of sugar, 3 tablespoons of fish sauce, 3 tablespoons of lemon juice, and 1 tablespoon of minced garlic and chili. Stir well until the sugar dissolves. Adjust the seasoning to taste.

Tossing the salad
Put the papaya, shrimp, and Vietnamese coriander in a bowl. Gradually pour the salad dressing into the bowl and adjust the seasoning to taste.
Then, add sliced chili, fried shallots, and peanuts to the salad.
Finally, use your hands to mix all the ingredients together and serve on a plate to enjoy.
