    To clean and remove the fishy smell from the fish, use a knife and scissors to cut off all the fins, internal organs, and blood vessels attached along the backbone of the fish.

    Then rub the fish evenly with salt for about 15 minutes and rinse it with several rounds of water.

    Add seasoning including: 1 teaspoon of monosodium glutamate, 1.5 teaspoons of seasoning powder, 3 teaspoons of sugar, 1/2 teaspoon of salt, 1 tablespoon of fish sauce, and a little pepper. Finally, add the tomatoes and cook for about 2 minutes, then add the coriander and scallions, season to taste, and turn off the heat.

    Tip:

    • If your family doesn’t like spicy food, you can skip adding chili.
    • Only add the fish when the water is boiling to avoid making the soup smell fishy.
    • Don’t stir too much with a ladle as it may break the fish.
