  • Prepare the eel meat

    After buying the eel, scrape off the slime, remove the head and internal organs. Use a knife to cut away the backbone of the eel to get fillets.

    Wash the eel with 1 tablespoon of salt and 2 tablespoons of white wine. Rub the eel meat with the mixture for about 5 minutes, then rinse with clean water.

    Cut the eel fillet into bite-sized pieces and marinate them.
