  • Prepare the ingredients

    Chicken thigh mushrooms should be washed with diluted salt water, cut off the black roots, and then cut into bite-sized pieces if the mushrooms are too large, then rinse with clean water and drain.

    Choy sum should have the roots removed, rinsed with salt water, then washed clean with water, drained, and cut into short pieces about 1 finger length.

    Dry hủ tiếu should be washed with water to soften for about 10 minutes, drained, and then cut the hủ tiếu strands in half to make stir-frying easier.

    Shallots should be peeled, washed clean with water, and then sliced thinly.

  • Prepare and fry the tofu

    White tofu is rinsed with water and then cut into thin pieces about 1/2 finger length using a knife.

    Heat a pan on the stove with 3 tablespoons of cooking oil; when the oil is hot, add the cut tofu and fry over medium heat.

    Flip and fry until the tofu is evenly golden on both sides, then turn off the heat and place it on a plate. Wait for the tofu to cool slightly, then cut it into bite-sized squares.

  • Make the sauce

    In a bowl, combine the ingredients: 3 tablespoons of soy sauce, 2 tablespoons of chili sauce, and 2 tablespoons of black bean sauce, then stir well until the mixture is combined.

  • Stir-frying rice noodles

    Place a pot on the stove with 3 tablespoons of cooking oil over medium heat. When the oil is hot, add 2 teaspoons of sugar and stir until the sugar turns a caramel color, then add sliced shallots to sauté until fragrant.

    After that, add the prepared chicken thigh mushrooms and stir-fry for about 1 minute, then add the bok choy, 1 teaspoon of monosodium glutamate, and 1/2 teaspoon of salt, and stir-fry for about 5 minutes.

    Next, add the rice noodles, fried tofu, and the prepared sauce mixture, stir well for about 7 minutes, then taste and adjust seasoning before turning off the heat.
