  • Choose carrots that are bright, deep orange. Select those with fresh tops, medium size, and elongated shape.
  • It is best to choose those that feel heavy and firm in hand.
  • You should not buy carrots that are pale, without tops, bruised or damaged. Avoid overly large carrots, as they may be old and not tasty.

How to cook Stir-fried Eggs with Vegetables

  • Prepare the ingredients

    Cut the broccoli into small pieces, wash thoroughly and soak in salt water for 10 minutes.

    Wash the dried mushrooms and soak in water with 1 teaspoon of sugar and 1 teaspoon of salt for 3 minutes. After the mushrooms have expanded, cut off the stems and wash them again.

    Peel the carrots, wash them and cut them into thin slices. For the tomatoes, wash them well and cut them into wedges.

    Peel the garlic and ginger, wash the green onions, then slice the garlic and green onions thinly and mince the ginger.

    Once fragrant, add the carrot, tomato, shiitake mushrooms, and broccoli in turn.

    After 3 minutes of stir-frying, add the eggs, reduce the heat, mix well, and season the dish with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of salt, and 1 teaspoon of sugar.

    Add 30ml of water to the pan and continue to stir-fry for another 3 minutes to finish.
