How to Make Tapioca Pearls from Glutinous Rice Flour

Kneading dough
Next, gradually add 260ml of boiling water into the bowl of flour mixture, then use a spoon to mix for about 3 minutes until the water cools down, then use your hands to knead the dough.
After that, put the dough onto a cutting board and knead it like kneading bread until the dough is smooth, elastic, and not sticky to your hands.

Rolling balls
You divide the dough into small round balls. Continue to roll the dough into a long shape, then use a knife to cut it into small pieces and roll them into balls.
To prevent the tapioca pearls from sticking together, you need to prepare a bowl with some tapioca starch; after shaping each ball, place it into the bowl of starch immediately.

Boiled Tapioca Pearls
First, you place a pot of water on the stove and bring it to a boil. When the water boils, add all the tapioca pearls and use a spoon to stir so that the pearls do not stick to the bottom of the pot.
Then, cover the pot, and when the water boils again, uncover it and stir once more, then continue to cover. During the boiling process, keep the heat high and monitor to avoid overflowing. Just boil for about 15 minutes, then turn off the heat and let it sit on the stove for another 15 minutes. If you boil over medium heat and keep the lid open, boil for 30 minutes and let sit for 15 minutes.
Tip:- You should only boil as much as you plan to eat, especially when the tapioca pearls are frozen; they should only be cooked for one serving.
- To reduce stickiness, after letting them sit on the stove, you must scoop the tapioca pearls out and rinse them briefly in a bowl of clean water.
After that, put the tapioca pearls in a bowl, add 2 teaspoons of sugar, and wait for 10 minutes for the sugar to soak into the pearls before taking them out to enjoy with milk tea (the sugar helps the pearls taste sweeter and prevents them from swelling when stored in the refrigerator).
Note: To avoid the tapioca pearls becoming chewy when they encounter ice, do not soak them in cold water for too long; just rinse them briefly to reduce stickiness. -

How to make lychee milk tea

Boil tapioca pearls and prepare lychee
First, wash the lychees you bought, peel them, remove the seeds, and place the lychee flesh in a bowl.
Tip: You can buy fresh lychees to peel and clean or buy canned lychee directly at Bách Hoá XANH supermarket or buy online at bachhoaxanh.com.Boil 400ml of water, then add the tapioca pearls and stir continuously until the pearls become translucent, then turn off the heat.
You cover the pot tightly and let it sit for another 20 minutes. Next, drain the pearls in a colander and rinse them immediately under cold running water to prevent sticking.

Make the milk tea
Pour 300ml of water into a pot, turn on the heat to boil, then gradually add 3 tea bags, 150ml of lychee juice, 1/2 of the lychee flesh, and 300ml of sweetened fresh milk into the pot.
Stir well, and cook for another 3 minutes for the ingredients to blend together.
Next, turn off the heat, remove the tea bags, and let the lychee milk tea mixture cool at room temperature for 20 minutes.
Tip: For lychee milk tea, green tea is often used more than black tea because the light flavor of green tea enhances the sweetness of the lychee water perfectly. -
Completion
After the lychee milk tea mixture has cooled, put it in a blender with 5 ice cubes, and blend until smooth.
